  • Cream of tomato soup

      This was one of the simplest, yet delicious, soups I've ever made & I've made a lot of soup in my life! Just tomatoes, onion, bit of olive oil, salt & pepper, and 1/4 cup heavy cream (I did add a 1/2 tsp sugar & a shake of dried basil which probably was unnecessary). The main work is skinning & seeding 3 lbs of tomatoes. My tomatoes were nothing special, just the typical grocery store variety. I guess the tomato flavor is not obscured by anything else & really shines through!
