  A nice vinaigrette. The balsamic vinegar flavor is fairly strong, but you could easily substitute another vinegar if you don't like the taste. Best with assertive greens. Add more salt and pepper on each salad to taste.

  This is a great dressing. Next time I will reduce the shallots a little bit. Will make again.

  I made this as written several years ago and remembered that it was really delicious. More recently, I made a variation using smoked trout instead of the crabmeat and caviar. It was also great. I reduced the butter to 4 Tbsp and it still turned out well and was plenty rich.
