  • Lemon soaking glaze

      I believe this is the same recipe as the one found in this author's other book "Baking by Flavor" - got missed during indexing for EYB. This is an excellent glaze for amping up lemon flavor on a cake, adding excellent moisture, tartness, and strong lemon flavor. The glaze doesn't migrate far beyond the outer centimeter or so of cake, but the flavor carries through during eating.

    It's an absolutely beautiful book, both inside and out. When I first received it, I spent a good hour leafing through its pages, utterly enchanted by its pretty pink swirly whirly style. Beautiful.

    Organized not by recipe type but by Yockelson's whim, it's unlike any baking book I've seen before, so dizzyingly rich it's best consumed in small, well-spaced bites.
