    Dumac & Cheese (pg 51) is a very rich version of Mac & cheese - more than a cup of heavy cream with Gruyere and cheddar. Excellent flavor.

    My niece's husband is the usual family Mac & Cheese specialist, often offering a choice at family dinners. When the duty fell on me, I honored the fans of Margherita's pizza with Mac and cheese Margherita (pg 79). One gets the tomatoes, the basil, and the cheese -- mozzarella and Parmesan. It uses no cream so this is not a super rich Mac and cheese making it a very appropriate side dish.
