  • Onion risotto (Risotto alla cipolla)

      Very delicious risotto! The onions are sautéed separately & pureed with some wine, & then added into the risotto with the broth, which keeps the texture very smooth. The onion flavor permeates, but is mild. The addition of cream at the end (I used half and half) makes this truly luscious.
