    I ran out of sumac so had to use paprika and skipped the fennel pollen because I did not have any and I chucked all the fronds from the fennel when it was harvested from the garden, so all I had in the salad was apple matchsticks. Nonetheless, the dish still turned out stellar albeit a little bit salty, next time I’ll cut down on the amount of salt used in the rub.

    This was quite good and very easy and hands off once you got the marinade made. I marinated for 7 hours.

    The butter flavored with shallots,capers, mustard, worchestershire sauce, smoked paprika, curry, chives and thyme was delicious, really elevated the not so stellar cut of beef for steak.

    Moist, tender and flavorful. I brined for 16 hours and followed the recipe up to the last step Instead of putting the remaining half of the rub on the outside of the loin and grilling it on a rotisserie, I put it in a sous bath for 4 hours at 137 degree F. Then I put the rub on and seared the outside on the grill.

    Recommended makeover #2 for the leftover of the slow-roasted pork shoulder with carrots, onions and garlic. The servings were somewhat small, the two of us finished the four sandwiches made from a whole baguette that were meant to serve four. They may be sufficient for four for lunch, but for dinner you need to supplement them with a side. The slaw was really refreshing, the leftover slaw was great on my roast beef sandwich the next day.

    Recommended makeover #1 for the leftover of the slow-roasted pork shoulder with carrots, onions and garlic. Very good and quite easy. I used white cornmeal since that was what I had on hand.
