Notes about Recipes in this book

  • Banana oat breakfast bake

    • sarahj22 on January 15, 2025

Tasty and easy. I'm not a fan of porridge but love baked things involving oats - this hit the spot. I used tahini instead of peanut butter and honey instead of maple syrup as the recipe suggests. Flavourwise it's similar to an Emily English breakfast banana bread recipe but texturally softer. I'll probably alternate between the two. Note the yogurt is a serving suggestion and doesn't get incorporated into the bake.

  • Herb and mushroom breakfast slices

    • sarahj22 on January 07, 2025

Delicious. I'm not crazy about mushrooms, mustard or quiche so I was surprised I enjoyed these so much - tastes like a really tasty but lighter quiche. I used chestnut mushrooms, cheddar for the cheese, dill for the soft herbs and chickpea flour as suggested. Cooked on baking paper in the air fryer on bake/roast for 15 mins then left there for another 10. Really tasty both hot and cold, so good for batch cooking and eating over a few days.

  • Super seedy crackers

    • sarahj22 on December 29, 2024

Yummy. I made these in the bottom of my air fryer on bake/roast so I don't think they were as thin as the recipe specifies, but they were still delicious that way - the base has a really nice flakiness. I served these with dip but they're flavourful enough to work on their own. (It's also good to find a use for the huge bag of chickpea flour lurking in my cupboard.) A definite repeat.

  • Butter beans and roasted peppers with chimichurri

    • melba on March 21, 2025

Such a fresh zesty salad. Great on its own for lunch.

  • Throw-it-all-in lentils and garlic lime yoghurt

    • melba on March 21, 2025

So warm and comforting, love this so much.

  • Carrot cake oat cookies

    • sarahj22 on January 28, 2025

Very nice. I skipped the walnuts and doubled the amount of raisins. I also subbed honey for maple syrup and was cavalier with measuring the honey. Several did fall apart a bit when baking but I'm sure that was my fault and not the recipe's. The ones that fell apart I still plan to use as a granola-like topping for natural yogurt. My three year old also enjoyed these and requested more, so they're a definite repeat. I'm really enjoying cooking from this book - everything I've made so far has been lovely and worth making again.
