      I used pink and white beets, so they don't show up on the photo. Overall I was pleasantly surprised with the texture of this dish, but it didn't pack a punch of taste. It mostly just gave sweet because of the beets, I think it needed more cheese mixed right through. I'd try it again with maybe mushrooms, ham and more cheese.

      This is one of my go-to recipes when I need a fast and easy breakfast. I leave it prepped at night and in the morning I add fruit and granola! Love the chia pudding !!

  • Mango curry chicken salad

      This was a nice recipe, I made it to go with jacket potatoes and a side salad. I omitted the celery since my partner is not a fan, and used cucumber instead. Something is definitely necessary for a bit of crunch. I think overall there was too much mayo, next time I'd use less or maybe sub some with creme fraiche or natural yoghurt. I wouldn't rush to make this again, but we did enjoy it.

      Always delicious! I always do this chicken salad when mango is in season and it is always good and easy to make.

  • Broccoli salad with crispy bacon, sunflower seeds and cranberries

      I blanched the broccoli and then ran it under cold water, as I was a bit scepitcal of leaving it entirely raw. I also didn't have dried cranberries, but I did have frozen ones - my attempt to dry them in the oven left them a bit crispy, some might say burnt, but I did manage to salvage a few to use in. In terms of the finished product: my partner absolutely loved this salad and everything about it, I haven't seem him as enthusiastic about a salad recipe for a good while. I however thought that it could cope with a bit less of the dressing, and also that I'd prefer it with feta instead of goat's cheese. But I will definitely be repeating with these tweaks!

      Subbed almonds for sunflowers and pecorino romano for goat cheese based on what we had in the fridge and it was delicious!

      I couldn't get corn on the cob, so made it with tinned sweetcorn, which I grilled. As a result, the recipe was nice but not amazing. I would add more dressing and maybe a little something sweet into it, like honey.

      This was delicious, as well as easy and quick. I did it in my Ninja with the bake/roast function: even at a slightly lower temperature it cooked quicker than expected and I cut the cooking time short to avoid it going from crispy/charred at the edges to burnt. The tahini dressing was delicious. I think this would be served best "warm" rather than hot or cold.

      This was a solid chickpea/cucumber salad, I really liked the flavours. I didn't have dill but I can see that would have been a nice addition - or I think mint would have worked too. I made a half quantity as the main side dish for two people. There was a bit too much dressing for the quantity of salad, I would probably halve it next time.

      I should have added more salt, rather than the vague sprinkle I did, because they really needed more to bring out the flavour. I couldn't really taste the spinach much, and I think they would have benefited from more seasoning like some lemon zest or sumac. Perhaps if I'd been able to get fresh oregano that would have helped. But not bad for a low calorie meal - I also wonder if they'd have been nicer smaller so that they could take in more dip.

      I didn't have enough potatoes, so I filled out with some carrots. In fact, the potatoes didn't cook through properly and certainly didn't go crispy, I think because the chicken was sitting on top of them - I appreciate the one pan method, but I did miss the crispiness on the potatoes. I really liked the lemony notes in the dish, but found it a bit oily overall and also I felt the flavours didn't penetrate the chicken enough - maybe it would have been nice to leave it to marinate a bit first.

      This was really tasty, moreso than I expected for something pretty healthy and easy. I did the chicken breasts in the air fryer. Would definitely make again.

      Made this with some substitutions… cubed tofu & garbanzo beans in lieu of chicken; no bell peppers, red onions, or feta; added eggplant and tossed with green onions & sunflower seeds at the end. So. The same, but different. ?? Tasty, though!

  • Slow-cooker maple mustard pulled pork

      I made this to christen the slow-cooker function on my new Ninja Foodi. The pork wasn't quite fully defrosted when I put it in (high for 6 hours) but it was cooked to perfection nonetheless. I also misread the instructions and added the full quantity of sauce during cooking, instead of saving some for the end, but I'm not sure this would have made much difference. The texture of the pork was perfect, but my main issue is that the maple syrup dominated and the whole thing was too sweet. I have also found with some other recipes in this book that they come out too sweet for my taste - possibly since I'm not used to American cookbooks and maybe the recipes tend to be sweeter?

      Accidentally increased onion, doubled cayenne (doubled spice blend overall since had two pieces of trout). Hit with the family. I was glad it was low salt. Broccoli added (tossed in avo oil and leftover spice blend) and cooked in oven at 350 until fish was done.

      I made this since my partner is doing the 5:2 diet and it fit into the calories for a "fast day" meal. His verdict: "considering I hate courgette, and it's a low calorie meal, it's actually pretty good". Which is quite high praise, and means I'll be repeating this one. I had a portion too, and I liked it - the lemon really comes through and makes it sing. I omitted the celery, and used half the quantity of cashews stated (because it's all I had) and used a splash of regular milk to make up for it.

      Felt like too much dill and lemon. And for a meal prep book, it didn’t keep in the fridge very well. The leftovers felt inedible.

      These tasted great, a lovely combination of ingredients. However I had an issue with them a) coming together into coherent balls and b) cooking. I added a little bit of water to try to help form the balls, which helped but they were still quite loose. But in deep frying, they completely fell apart - having researched online I think it might well be because my oil was too hot or too cold (I was very lax and didn't check the temperature). I will try this recipe again and bake them in the oven.

  • Coconut chickpea curry

      For a simple recipe, this was really tasty. I loved the creamy, thick sauce, the textures of it all, the taste. The squeeze of lime over the top at the end was really great to lift it all and give it a zing: not a traditional addition to an Indian-type curry, but I would do this again.

      I loved that this was a healthy recipe and how easy it was to prepare. In terms of the result, I would categorise it as "quite nice for something healthy" ;-). I served with liberal amounts of sour cream and more mozzarella than was recommended, and would definitely see these as essential additions. I think if I made it again I would use less corn as this was a bit overpowering (I couldn't really taste the sweet potato at all) and maybe add some chicken.

      This is very easy and delicious. I just cut up butternut squash or sweet potato very small since I didn't have a spiralizer. You really don't taste the potato, just so you know, since my husband poo-poos food with that in it. It's very comforting.

  • Carrot and cannellini bean fritters with herb yogurt sauce

      I couldn't get chia seeds, which were supposed to be a gelling agent, but since such a small quantity was called for I thought I could get away with adding a little more flour and water. This seemed to be OK, but the fritters were threatening to fall apart during cooking, they just about held together though. I liked the flavours, and the dip, but not sure I'd repeat this really.

      The fritters didn't hold together well and somewhat disintegrated in the pan. They were very tasty though with the yogurt sauce and served with a simply dressed salad. I will try again with an egg to replace the chia mixture and see if that binds the fritters better.
