    Recommended recipes by eating joy: This morning, I'm highlighting some of the most visited recipes (favorites of mine): Arkansas-Bridgeford Cottage (Eureka Springs) Pineapple Sheet Cake, p. 18 A one bowl cake that comes together in minutes. Topped with rich cream cheese frosting. Bakes in 25 mins. We've used canned crushed pineapple, fresh, ripe diced pineapple, add pineapple bits to the frosting and always enjoy the cake more the 2nd or 3rd day. Oh! and we enjoy the cake more when chilled. Maine-The Wild Rose of York (York)- Pfannkuchen German Crepes, p. 148 We make these the night before for breakfast. Warm in a dry pan in the morning fill with jam, fruit, Nutella or just as is.       These are not too sweet. Added 1/2 cherry on top of chocolate. Did 18 min. Maybe a min or two longer next time.

      This was an excellent dish but I modified it by only using 8 ounces of Monterey Jack cheese. I would highly recommend this, as it had plenty of cheese and still allowed you to taste the egg. The edges made a nice crust that provided texture to the bite.

      Flavorful combo, with mushroom/sour cream sauce poured on part-way thru baking.. A half recipe in an 8 x 8 pan yielded 6 large servings. I used whole-grain bread, skim milk and lower-fat sour cream but this is still a calorie-rich dish. Substitutions for canned items: I made a microwaved small-batch home version of condensed cream of mushroom soup equivalent to half-can, using 2 fresh mushrooms finely chopped, butter, flour, skim milk, garlic salt, celery salt and dried minced onion. I added 4 sliced fresh mushrooms to that instead of the half-can.

      Super easy, very tasty. I subbed black cherry gelatin in one batch, might be my favorite. Also did raspberry gelatin in another, very good too.

      First rhubarb recipe of 2024. This recipe is easy to make and has a robust rhubarb flavor. The rhubarb cooks down and brings all the crumble ingredients together. Great with a scoop of vanilla ice cream.

      A classic pancake mix that is quick to prepare. I added blueberries on top of the batter after pouring them out onto the griddle. Good bite and a solid pancake.

      I usually double up on the sauce recipe, so I can make the meatballs as a meal with rice and a salad or veggies. I've been making these since my kids were little, and they ask me to make them every year. They are now they're in their 40s! Add more hot sauce if you really like it spicier. This is a sweet & spicy appetizer otherwise, but oh so good.

  • Chocolate almond pie

      This recipe was VERY poorly written. The instructions did not include the evaporated milk so I added it anyway. And, the crust didn't begin to stick together. We served it as chocolate pudding with almond crumbles and it was great. But, if you want a pie be prepared to majorly modify the crust portion of the recipe!
