      This bread is delicious. The crumb is perfect. Reminds me of the best soft Vienna Bread. 5 people ate a whole loaf with soup for supper. Made vegan buttermilk: 1 tsp vinegar added to enough almond milk to make the required 1/3 cup.

      Surprisingly mild. Made as written. You can taste the jalapeños but there is very little heat. Definitely take the time to toast the cumin.

      p. 17 -- Basic white sandwich loaf, though chewier and more flavorful than I expected, I guess due to the extended rising time.
