VANILLA page 20. 4 Stars. Good basic vanilla ice cream.

  • Pamsy on August 11, 2025

MINT CHOCOLATE CHIP page 34. 5 Stars. Needs to be made the day before as Creme de Menthe inhibits the freezing process, so at least 18 hours in the freezer.

ORANGE CHOCOLATE CHIP page 60. 4 Stars. Uses egg whites, no yolks.

CHERRY AMARETTO page 84. 5 Stars. See book for details.

MOCHA ALMOND page33. 4 Stars. Used 125mls coffee from Lavazza machine which gave a pleasant, not overpowering flavour. Pinch of mixed spice did not come through so increase next time. Reading the recipe through again to write this note, it's not clear, but I think you add dollops of the chocolate fudge sauce as you spoon the ice cream into the freezer container. This will then harden up along with the ice cream? Today I served the sauce atop the ice cream. The whole thing would definitely be improved by the addition of Kahlua.

Publishers Text

An ice cream machine takes the strain and speeds up the process of homemade ice cream, eliminating the need to break up ice crystals yet producing seductive confections without fuss. If you don't own a machine, buy one! Manufacturers' instructions may contain a handful of recipes but you will want more, and more! Each of the sun-kissed recipes in "The Ice Cream Machine Book" has been prepared for use in a variety of machines, either top-of-the-range or less expensive models, or indeed without a machine at all - they make preparing ice cream almost as much fun as eating it! Over 100 recipes feature sherbets, sorbets, reduced fat ice creams, as well as ice milk and tofu ice creams, with further sections on sauces and luxury desserts. The all-time favourites are here: vanilla and strawberry, along with extraordinary experiences such as Chilli and Chocolate Ice Cream or Raspberry Tofu Ripple.
