      Chinese garlic chives, finely chopped, make a nice addition at the moment you add the mushrooms and bean thread noodles to the pan. They give this plain-looking dish some color but add less pungency than scallions.

      This is surprisingly delicious! It calls for ingredients I always have on hand, and even better, it’s super-easy to make at the last minute. The pickles, onion, sugar, ginger, garlic, and soy sauce all work together to make a really tasty dish! I used ground turkey rather than pork.

      I doubled this and it filled my large wok. The only change I made was that I used fresh oyster mushrooms instead of dried mushrooms. We really liked this as it has a perfect spiciness, mild enough for my husband but spicy enough to be interesting.

      A mixture of vegetables -carrots, bamboo shoots, mushrooms, celery, zucchini, bean sprouts - is covered by a simple omelet and a sauce poured over. The sauce wasn't quite to my taste ... perhaps plum sauce rather than catsup would be more to my taste.
