    Astonishingly easy and quick. It also tastes delicious. The key is to cook the rice the previous day - this is the only complication.

    This does not take a long time to cook but requires a long preparation time. It is worth the effort. It is a rich dish so suggest that it is accompanied by a light fresh Thai salad - for example Son Tum (cabbage, carrots, tomatoes with chillies, peanuts and lemon/lime juice).

    What a delicious, easy curry for a Friday night! I used Maesri red curry paste and both water spinach and Choy Sum. I used a whole tin of coconut milk as I wasn’t going to save half a tin. Can’t believe I haven’t made this before.

    The red curry paste in the book is spicy but worth the effort. Recommend that you make the full amount and freeze any remainder.

    Put sweet soy sauce on after nearly cooked. This way you can get it hot enough to melt the duck fat and not burn the outside. The sauce is particularly gorgeous.
