      Looking for inspiration for some chicken thighs: EYB search to the rescue .. This was quick , easy, light, flavoursome. Well balanced Thai-style salad.

      another winner by Bill - I love apricot bars (right behind lemon bars as a favorite) and this is a chewy, buttery, not too sweet version. I like the combination of dried apricots and jam which makes a tart sweet chewy filling. I used a dark pan and although I lowered the temp, the edges got a little crisp, not burnt but a bit overdone. I baked for 5 mins less than recommended but next time will use a shiny pan or reduce the second bake time by a few minutes.

      This turned out spicier than I thought it would be, must be the piece of old ginger that I used, it packed a lot of heat. The recipe is simple and fast and quite satisfying with the chick peas in there.

      Found a package of Costco Irish bangers from last year's St Patrick's Day in the freezer, so banger and mash was dinner. I halved the recipe to serve two and because of my husband's aversion to vinegar, I further halved the halved amount of sugar and vinegar, used agave nectar and balsamic vinegar, the vinegar did cook off, had no complaint from the hubby. I was somewhat skeptical about the tiny amount Parmesan added, but it was just fine, did not overpower. Quick and satisfying.
