• Apple, dried cherry and almond loaf

    I make this every time we go camping or to a holiday house and everybody loves it. As I can't be bothered to source dried cherries I substitute whatever dried fruits I have in the pantry and it always turns out beautifully. It will last for 5 days.

• Chickpea, burghul and parsley salad with marinated lamb

    Lamb was great. Add some tomato to the salad and go lighter on the pomegranate molasses (to taste).

• Pan-fried fish with lime and chilli slaw

    Made this last night using salmon fillet instead. The slaw was really delicious and zingy and complimented the fish. Easy to make. I prepared the veggies for the slaw and using my clean hands mushed them up a little just to release some of the juices... not too much for about 15 seconds .. then, I added the dressing. Served with a little brown rice on the side. Will most definitely make this again... The slaw was the highlight of this meal.

• Broccolini and tofu sambal

    A very quick easy supper dish. I prepared the tofu the night before by pressing it with a heavy cast iron casserole dish( to remove the excess water) for a few hours and then popped it into the fridge overnight. I find this helps the tofu to brown when frying. Once that is done ,and you have the rice doing its thing and almost ready ... this dish takes no time at all. I wasn't sure what to expect. It looked a little dry so I added about 100mls water to the pan. The flavours were there and the sambal oelek gave it a nice warmth without it being so spicy that my 12 yr old would complain. Another BG winner.

    Easy,quick to made using store cupboard standbys. Often make this for the kids to put in their lunch boxes. Nice to add celery to also.

• Chilli bean burritos with corn salsa

    Easy and tasty with ingredients I always have to hand. The kidney bean element makes it more interesting than just veggie burritos. Definitely worth repeating. Didn't make the corn salsa, although I would have enjoyed it.

• Moroccan fish stew

    Very adaptable recipe. Previously used salmon and prawns in place of white fish and when I didn't have chickpeas subbed an aubergine and a green pepper. Easy weeknight dinner.

• Sweet and sour cabbage

    Page 69. This time left out red onion, garlic, cumin and brown sugar. Instead added a handful of sultanas to the red cabbage. Excellent.

• Salmon with mint and roast potato salad

    First recipe from this book and a winner. Use plenty of mint and spring onions can be replaced with finely sliced red onion (I mixed all of this together) Served with Cyprus potatoes, par boiled, cut into wedges and oven roasted. Pan fried salmon was very nice but I can see other possibilities (tuna, swordfish or chicken). Listed under easy weeknight dinners in the book and it definitely was.

• Lime, paprika and honey glazed chicken

    Peel the limes before adding to the baking dish. Otherwise the pith makes the whole dish bitter.

    This was an okay dish of juicy roasted chicken legs with Asian influenced flavourings. With such ingredients as garlic, ginger and honey added to the chicken stock that the meat was cooked in, I expected this to have a bigger, bolder flavour than it did. It was a bit bland, really, but overall still pleasant enough to eat.

    Due to unforeseen circumstances, I could not start eating after the dish was ready, so I decided to leave it into the oven for 1 more hour while the oven was put off and losing temperature. I think this made the dish even better.

• Stir-fried chicken with peanuts and cucumber

    I'd never used cucumbers in a stir-fry before and wasn't sure if I'd like the taste, but they added a nice crunch and delicate flavour to this healthy, summery dish. The sauce, which was Chinese rice wine, soy sauce, sesame oil, cornflour, caster sugar and probably something else I'm forgetting added a nice amount of flavour. The cucumbers and peppers made this pretty to look at and the chopped peanuts added at the end gave it an extra dimension of flavour and texture.

• Sausages with caramelized onions and Parmesan mash

    This was okay, but I did this according to the recipe, expecting the red onions covered in brown sugar, olive oil, red wine vinegar and season to get more caramelised and the sauce to go syrupy. That didn't really happen and the sauce was very thin. The onions tasted nice and went well with the sausages, as did the extra ingredient of parmesan in my mash, but this wasn't particularly memorable.

• Real muesli bars

    I make these a lot. But I add 1/2cup of peanut butter with the sweetener and oil and sugar while heating....as Bill Granger did on his tv show/dvd.. when he showed how to make these. Not sure why it wasn't included in the book.. as the recipe is exactly the same minus the peanut butter. I have also made these using buckwheat flakes and raw groats to make them gluten free ( I am gluten free and cannot tolerate oats) but my kids like the regular oat version. Easy to make and delicious. Also great bashed up to use as granola which i then sore in a glass jar. Can also substitute honey for rice bran syrup ... which I have also done.

    This is classic Bill - simple, tasty and made with things you likely have on hand. A healthy version for when you a curry kick - all my kids happily eat this with steamed rice on the side.

    This was really good. I had my doubts about it staying intact when my salmon cubes started falling apart a bit in the frying pan, but the flavour of the sauce was so good that it didn't matter that they were a tiny bit crumbly. Except for the red onion, I halved this recipe as I was just cooking for two, and the sauce, which was basically garlic, soy sauce, fish sauce, sugar and lime juice, tasted great. I even used light soy sauce instead of dark as that was all I had. This went perfectly with steamed basmati rice and I'll definitely be making it again as it's a very tasty, quick meal that is perfect for weeknights.
