    Crabmeat Omelete, page 34. This flat style omelete seems so universal. In japan, it's called tenshinhan (similar to egg foo young) but with rice on bottom and sauce on top and another one very similar to this recipe called kanitama (crab and eggs). Then, there is fritatta in the West. This omelete uses fish sauce in the mixture which certainly makes this Vietnamese in flavor. Very easy recipe to make and tasty with cilantro on top. Don't need to use crab and other protein can easily be substituted. Easy Christmas brunch for us.

    Hanoi Beef Noodle Soup (Pho Bo) page 36 - had a wonderful bowl of Pho Bo in Saigon recently and got hooked on taste. In the past I really was not that keen on pho but since my trip it has certainly changed. Trying to recreate from memory as well as using books. I added cloves and some sugar to the broth as well. This tastes darn good for the first time.
