    Levain Crackers (p249). I've attempted this twice now (figured I may as well as it uses levain that would otherwise be thrown away) however I've had no luck. I won't bother repeating again.

      Easy weekend recipe with yoghurt substituted for the buttermilk. Fairly light results however they didn't impress me as much as Bill Granger's recipe. (p26)

      Made this as a birthday cake, filled with mixed berry jam and topped with raspberry flavoured icing. I was really impressed with the result, especially after I realised it was the first time I've made a Victoria sponge cake. I lined the base of my tins. (p161)

  • Lemon chiffon cake

      Loved the flavour of this cake but sadly I didn't have any success creating a cake that actually stayed as a whole cake! The first time I baked this it collapsed on itself in the oven and browned quite quickly. So, I attempted to bake it a second time, keeping a closer eye on progress. I pulled it out just as it started to deflate and then attempted to tip the cake over and support it but managed to squash it in the process. I will have to practice! The two cakes made for a delicious trifle though - I layered them with Dorie Greenspan's lemon cream (amazing), limoncello, and banana passionfruit, and topped the trifle with blackberries and chopped pistachios. Amazing dessert.

      Made this with very ripe bananas I had peeled, frozen and then defrosted and refrigerated for a couple of days before use. Absolutely delicious, almost toffee-like in flavour.

      Made 1/3 recipe for a mini loaf tin to use up one ripe banana and needed an egg-free baking treat. Forgot to put in baking powder. Did not rise! Must repeat with correct ingredients because the mix tasted great.

      Really good. The lemons on top were too sour though. Maybe I had the wrong lemons.

      Handy egg and butter free cake. I made it with frozen blueberries instead of the raspberries. It was sweet enough without icing, very moist and went down a treat.

      Easy and very delicious cake. It needed a lot less time than the recipe says. Check it at 40 minutes. I added some orange zest to the batter.

  • Sicilian apple and pine nut cake

      More like a clafoutis than a cake, it is much more apple than batter. Look up a picture on line if you've never baked/eaten one before. Very tasty, needs a good apple. Next time I'm going to toast the pine nuts that go into the batter a little first. Not the ones that go on top!

      So moist, so tasty, the base is a go-to for work functions, but I cannot get the topping right. It is always kind of crispy like toffee, not a frosting or icing. I even asked Phillippa about it, at a market, and she couldn't see where I was going wrong. It's not a debacle, it still tastes great. But I want to get it right!

      Needs a good quality lemon curd, and less than what you see in the picture. I didn't have time and used commercial and it was too sweet. The cake was great.

      These are great as a sweet scone, though I wouldn't repeat my mistake of making them a bit larger than the 5cm specified - they lost a lot of lift. Fortunately, they still tasted fantastic.

      These are fantastic & ridiculously quick & easy to make. The cocoa powder & golden syrup in the ingredients list belong to the accompanying chocolate sauce, which I didn’t make & I really can’t imagine would be a good match. The ‘blondie’ is perfect just as is.

      These are effectively pucks of grated cheese with some polenta batter holding them together. Can't recommend.

      This is the second variation from the same base recipe, a savoury polenta muffin. We haven’t liked either, despite very different flavours. The texture is very ‘cakey’ & we found that reheating really dried it out.

      This brisee pastry is very fiddly & not forgiving at all. We find Matthew Evans' version more user-friendly with a tastier crumb.

      The brisee pastry is very fiddly & not forgiving at all. The filling works really well, but we prefer Yvette van Boven's "Fluffy pies" version.
