      Good and interesting cabbage dish. It calls for a lot of canola oil which made final dish a bit greasy. I was worried about the amount of vinegar but it's not too much. I used Alessi Balsamic vinegar and fancy white vinegar from the Olive Oil boutique flavored with cranberry and pears. I would make this again with less oil and plenty of seasoning.

      Have successfully substituted cherry tomatoes; mushrooms are a great addition. Coat in oil, salt, and roast.

      Roasted a little less than 1.5lb beets for 1 hour. This was really good, and usually I'm not that into beets, but the recipe made SO much, enough for a hearty side for 3-4 meals for two people (so 6-8 meals total!). Would halve the recipe next time.
