    Very yummy. Instead of tamari I used liquid aminos. I feel like the barley cold cook in the pot instead of using an extra pot.

    This was not very spicy, but it was nicely creamy with a good smoky/nutty accent. I could have done without the tomato and peppers in the topping - the taste did not blend well with the soup and the redness just served to accentuate the beigeness of the rest of the soup. Just parsley and yogurt was much better.

    Perfect soup for fall. The soup is not overly sweet, but pleasantly so. The yogurt provides a nice tang.

    Made this for lunch today and was happy that I had all the ingredients (except celery seed which I omitted) in my cupboards / fridge already. Very easy, quick and satisfying - I thought it needed a bit more sweetness so added a swirl of maple syrup at the end.

    This is essentially a hot pasta salad with a lot of flavor -- no complaints about that! I added about a cup of pasta cooking water to the pan with the vegetables for a bit more brothiness, and then finished cooking the pasta in that pan. I skimped on cauliflower due to supply but still plenty leftover for the next day.

    Nice! I had a ton of carrots, so this was a good way to use some (though I wasn't exactly sure what "4 large carrots" translated to--I used 4 cups worth.) I especially liked the roasted cashews in this dish. I happened to have some yogurt but it would have been fine without it. I substituted butter with sunflower oil to make it vegan. I'll make it again.

    Easy and delicious - apart from the cashews, which I needed to buy, I had everything on hand. I really liked the taste and level of the spices and the sliced (rather than cubed) potatoes worked really well. Yum!

    I only had about 1 1/2 c of orange juice so I added about 1/4 c each of lemon juice and water. Turned out good. Hearty meal. Makes large servings.

    This was delicious. Perfect for summer produce. I used fresh basil and oregano. For the cheese I used bagged Quattro Fromagio from Trader Joe’s, so it was more than just mozzarella. In the future I would just put the tomatoes on top without dredging in breadcrumbs. I didn’t love it. Also, one medium tomato was sufficient.

    This would benefit from more salt. I added 1 tsp of fine sea salt, but would do 1 tsp of Morton’s kosher in the future. I would probably prefer white rice, but I guess the brown rice is healthier. That said, there are a lot of vegetables, so that’s pretty healthy already. I used fresh basil in place of dried and 1/2 cup sherry and 1/4 cup Madeira.

    This is such a great base recipe. You can make almost any swap imaginable: grains, veggie, herbs. You can make rivers, mountains, animals etc. My children made dozens of variations of this forest growing up.
