  • Rice and beans

      Eh, it's okay. Very simple recipe though. But I continue to have problems with my rice still being too al dente, even though I never had difficulty cooking rice before. I'm beginning to think it's just the very cheap quality rice that comes from the food pantry that's causing that. Eventually I'll buy some quality converted rice.

  • Cabbage lasagna

      It's okay, but aside from the Parmesan cheese, the other cheese quantities (mozzarella and ricotta) are very small for a lasagna. I followed what was recommended for mozzarella, but for the ricotta, I had to add a touch more. I mean, no matter how you try to spread these small quantities across the pan, it winds up not being an even layer--it's just like a pat here and a pat there. My supermarket often sells ground beef in 3/4 lb. packages, oddly enough, and we got a free cabbage from the food pantry--so this recipe worked out well for us.

  • Chicken rice bake

      Easy and edible. That's all I can remember--made this one a couple of months ago.

  • Sweet potato, corn, and kale soup

      This was good when it was freshly made, but by the very next day the kale was very mushy.

  • Lentil barley stew with chicken

      It's okay if you don't mind eating brown mush. And the leftovers get even thicker after sitting in the fridge overnight.

  • Minestrone

      This was probably the best recipe that I've made from this cookbook, although the bar is rather low. I believe fat is healthful--so I didn't use low-fat versions of all of the ingredients. I never realized that cabbage is a common ingredient in minestrone.
