      The stuffing is flavorful; I appreciate the blend of starchy celeriac, sweet apricot and allspice. I cooked the stuffing separately in a casserole dish and roasted the duck in the oven; served together. Substituted 1/2 tsp ground allspice for allspice berries.

      I used 1 tablespoon butter (not 1 teaspoon, which I think was an error). With that adjustment, this is a terrific light vegetarian side dish. Easy, quick preparation.

      This is a yeasted version of aebleskivers; they are traditional with apple in the center. These are so good that family members request them regularly - right up there with Dutch babies.

In Scandinavia the whole period of Christmas, from the first Sunday in Advent to New Year's Day, is marked by festivals and celebrated in traditional but beautifully contemporary style.
