Notes about Recipes in this book

  • Large-batch cashew cream

    • lolako on February 12, 2026

Use less water to make creamier. Used the maximum amount of water and very watery. Was good to use in smoothies.

  • Easy vegan mashed potatoes

    • lolako on February 12, 2026

Not crazy about the seasoning, but best way to cook potatoes for mashed potatoes.

  • Large-batch butter chicken sauce (silky tomato sauce)

    • lolako on February 12, 2026

Loved this sauce. Didn't enjoy the malai kofta to go with it, but used the sauce on other things: mashed potatoes, tofu scramble, hash browns. Very easy and quick to make.

  • Royal rice with veggies & nuts (Vegetable biryani)

    • yaleksly on October 16, 2023

Really great - it became our standard recipe for biryani for its ease and flavor, and substituting vegetables worked a treat whenever we needed to.

  • Dump & done creamy Indian butter soy curls

    • sherri_xcf6n4 on April 11, 2026

SO GOOD!! Don’t skimp on cayenne. Didn’t have cilantro, still fabulous. Made 2 1/2 cups dry rice to go with. Definitely need to at least double (no leftovers as written) but could probably triple with that much rice.

  • Black-eyed pea & mung bean stew

    • NoaBC on January 02, 2024

This was good and easy but I found the spices very subtle - next time I'll double them.

  • Sweet potato & chard curry (Saag aloo)

    • lolako on February 12, 2026

Makes a lot more than two servings. Very delicious. Used baby spinach instead of chard. The spinach didn't break down in the instant pot.

  • Cauliflower pea curry (Gobi matar)

    • aimee_e671m1 on May 28, 2026

      Delicious meal. Served over couscous.

  • Indian cabbage & peas (Patta gobi sabzi)

    • anu_luke20 on May 01, 2026

Easy and delicious! Is nicely spicy and cabbage becomes almost buttery. We added frozen peas at same time as cabbage to instapot.

  • Minestrone

    • sherri_xcf6n4 on April 11, 2026

Doubled in instantpot and it just fit! I did 4 min on high with 8 minutes release for 7 minute elbow macaroni and everything was great except the pasta was overcooked. Maybe 3 min on high and 5 min natural release?

  • Chili sin carne mole

    • sherri_xcf6n4 on April 11, 2026

Wouldn’t recommend doubling this one in the 6 qt instantpot - do 1 1/2 X max. I would use a little less soy curls next time.

  • Chickpea sweet potato spinach curry

    • aimee_e671m1 on April 16, 2026

Mine turned out a little liquidy. I would reduce water amount or use smaller tomatoes.

  • West African-inspired peanut stew

    • sherri_xcf6n4 on April 11, 2026

Overcooked, would try 4-5 minutes on high and only 10 minutes release

  • General Tso's soy curls

    • sherri_xcf6n4 on April 11, 2026

Excellent! I shorted the sugar and it would have been fine with the amount in the recipe. Smooshed the stuff into the liquid and it cooked fine - no burn error. Could definitely easily quadruple.

  • Curried quinoa

    • sherri_xcf6n4 on April 11, 2026

Flavor great, but only had tri color quinoa which I didn’t care for. Will def try again with white quinoa. Added chickpeas from freezer and loved them in there.

  • Arroz con pollo

    • sherri_xcf6n4 on April 11, 2026

Doubled it and it fit perfect in the 6 qt!

  • Quick lasagna

    • sherri_xcf6n4 on April 11, 2026

The layering instructions do not seem adequate? I did a few more rounds to get rid of the filling. I did broil for 3-5 min afterwards. It tastes good, a tad on the healthy side, but tastes good. Quick might be an overstatement. I think I’d rather make a big pan?

  • Mushroom Stroganoff

    • sherri_xcf6n4 on April 11, 2026

This was so watery, i don’t know what to think about it. I wondered if I made it wrong - i am seeing a note for doubling in the paragraph - and I think maybe I tripled so I probably needed to lower the amount of stock.

  • Ziti with tomato sauce

    • sherri_xcf6n4 on April 11, 2026

Doubled, but 3x would have been better - 4x would have fit. Added airfryed sausages

  • Mushroom Tetrazzini

    • sherri_xcf6n4 on April 11, 2026

Excellent! Doubled recipe and used soy curls. The veg broth was a hair salty, but def would make this again!
