  • Grilled chicken thighs with edamame and grapefruit

      This book surprised me. I bought it because I was the last to eat (and sometimes going to bed without eating) due to the time demands of evening feeding livestock and pets on my small ranch. I wanted something quick. Tried my first recipe and wow!, this was great. 5 ingredients, but I would never had thought of making a salad of edamame and cilantro leaves with grapefruit juice and honey vinaigrette. Crispy flattened chicken thigh on top...done in 5 minutes on the counter-top grill pan. Really 5 minutes cooking, but plenty of prep work before you start counting. A winner.

  • Spicy beef tacos with fresh salsa

      July 2023: We really enjoyed these tacos. I added one medium, finely chopped, jalapeno pepper and about 1 cup of chopped red onion. Just before serving, I added about 1 cup of corn (that we froze last summer). Next time do a scant teaspoon of cayenne pepper. We made the tacos from scratch. I used Joe Yonan's Smoky Red Salsa recipe.

      Tasty. I didn't put in the full tablespoon of honey or two full tablespoons of lime juice.

      I enjoyed this smoothie very much. I didn’t have almond butter, so I used cashew butter. I added 1 tablespoon of pea protein powder and 1 tablespoon of chia seeds. It was a little thick, so before I removed it from the blender, I added a little water and re-blended it.

  • Spinach salad with ham steak and fried egg

      Delicious! Didn't have dijon mustard so we used stone ground, which worked. Used Easter ham. Added just a little sugar to the dressing because it was very tart. Mellowed it out. Will make again!
