  • Veggie stir-fry over brown rice

      I love stir fries and this was delicious. I used Symon's suggestion in the front of the book, to subsitute veggies for one's you have you didn't use all of in other recipes ,or have on hand. I used parsnips, zucchini, cauliflower, cabbage, broccoli, and red and orange sweet peppers. I couldn't find tamari so I used a no soy no wheat soy sauce alternative.

      Loved this one. It used some of the reserved Wild Mushroom Risotto I had a few days ago, as well as some of the dairy free Parmesan. A few roasted pine nuts gave it a little crunch. I'd make this again.

      Not sure why it's called wild mushroom, because it calls for cremini. I was out of purple onion so I used a sweet onion. There is a recipe to make bone broth in book but I used boxed. I didn't have fresh dill so stirred in a tiny bit of dried into my bowl. Hubby said it was good, but needed something, because it tasted a little bland. I liked it, but like him, I thought it needed a little something.

      The potatoes are sliced paper thin. I had a mandoline, but we all got cut when we tried to use it, so I put it up somewhere and now can't find it. It was a pain in the butt doing it with a vegetable peeler. Even after cooking 2 hrs and 15 min some of the potatoes were still not soft. All of us who ate it agreed while it was good we definitely like our lasagna better with noodles. Glad we tried it but wouldn't make again.

      It was a little had to shape into a patty. I plopped them on a plate and formed into patty. Then I used a spatula to lift them into pan to fry. Delicious. Collards from my farm share.

      This was supposed to be a mix of mushrooms. Cremini was one of the suggested and that's all I had so that's what I used. It was delicious.

      I used blue oyster mushrooms from my Tumbling Shoals Farm Share and two small cremini to make 3 cups sliced. I used boxed mushroom broth. I loved this. It made 2 servings, plus an extra cup to use in another recipe later this week. I gave the second serving to my daughter when they came by this afternoon. The Faux Parmesan from this book was good in this.

      Made a half recipe for daughter and I. I used Red Thai Curry paste, Better Than Bullion vegetable broth, and fire roasted tomatoes. Kale was from my farm share. We were hungry and I forgot to add the lemon juice. It was still delicious.

      Definitely a nope for us. Gluey, bland, and the lamb ended up really dry and flavorless.

      I cooked the asparagus and did two eggs instead of one - so good and satisfying!
