  • Broccoli cooked in red wine with provolone cheese (Broccoli alla Siciliana)

      This was a very different recipe and it took me a while to get used to the flavour combination of broccoli, red wine, cheese (I used Manchego as I couldn't find Provolone), anchovies and olives. It was not bad but even though I love all these ingredients, I didn't totally get it here. To be totally honest, it was probably the wine the one I liked less. Maybe next time can be cooked with veggie stock instead but I don't really think I'll be cooking it again.

  • Cabbage soup (Minestra di cavolo)

      This soup is an old Italian recipe that was considered poor man’s food. Hubby thought it had a very mild taste at first but the flavour developed and it was actually very tasty. Mostly vegetarian except for some speck that it’s optional. I used risoni instead of broken up fettucini because the packet was already opened and had to be used. It worked really well. Lovely dinner for a cold winter night.

  • Courgette saltimbocca (Saltimbocca di zucchine)

      This is a delicious take on Veal saltimbocca. It was quick to prepare. I actually didn't blanch the zucchini because it is thinly cut and thought it wasn't needed. Also, I had really large sage leaves so instead of cutting all ingredients to fit the zucchini slices, I put two together and worked really well. It was really yummy!!
