Notes about Recipes in this book

  • Thai chicken curry

    • eliza on February 11, 2016

Very tasty, easy to prepare, and quick. Highly recommended.

  • Ginger chicken

    • eliza on November 10, 2016

Easy and quick to make, it's a good weeknight meal.

  • Mango curried chicken

    • eliza on February 19, 2016

This dish takes a little bit longer than 30 minutes, most of that is not active time however. It's convenient since the rice, chicken, and veg cook together in one pot. A very tasty way to cook chicken.

  • Hurry curried lamb

    • eliza on July 28, 2025

I made this with ground beef as noted instead of the lamb. I changed the method a lot in accordance with the way I like to cook ground beef; I sautéed beef and onions together, then added garlic and spices and tomatoes with their juice. At this point I cooked 1.5 hours on very low. Finally I added the other veg and cooked until they were tender, followed by the chickpeas and raisins. We had it on rice which was delicious. I used a curry paste from my freezer stash in place of the curry powder and that worked well. Our version was really quite spicy and I’m looking forward to making it again.

  • Tortilla sandwich melts

    • eliza on November 11, 2016

These wraps are delicious! I made them in my sandwich/panini press, and they were so tasty and super quick to make. They make a terrific snack or lunch, and are nutritious since they include kidney beans, tomatoes, and cheese. Other beans such as black beans or pinto could easily be substituted. I used whole grain and flax seed wraps to make them since that's what I had, but any kind could work well.

  • Chicken burritos

    • eliza on November 15, 2016

A simple recipe, very easy to make, and very quick. Makes a tasty and nutritious light meal. I used red pepper instead of green.

  • Glazed pork tenderloin with Chinese noodles

    • eliza on November 04, 2022

Very good combination of pork, noodles, and veg with sauce. I use the cook method from Island Pork (oven roast instead of broiling), and it’s very easy to make within about 30 minutes.
