    This book is a true treasure. Worth having in your collection if only for the turkey cooking times. I always pull out this book come thanksgiving time, and the three recipes I have tried worked perfectly. Every year I vow to try other recipes after Thxgiving but then my attention gets diverted.

      Page 97. Thanksgiving 2014. Used William Sonoma's dry brine and then followed the instructions in this recipe to a tee. The turkey came out moist and incredibly flavorful. Added the pan drippings to the make ahead turkey gravy and served alongside. Based on the results, I will use this recipe every year.

      Page 107. Made this using a Trader Joe's ham. I did not make the dry brine as one was included in the TJ bag. Next time, I wouldn't use the TJ brine as I think it tainted the results. Having said that, it still came out very good.

      This is close to the recipe I cobbled together from several sources. The broth was 1 cup turkey stock, 1/4 c. port, 1/8 c. wine, 1/4 c. cream. 2 c. turkey meat, 2 c. veggies. The veggies are pan sautéed/roasted before adding to the pot.

      These enchiladas are easy to prepare and make a perfect choice for T-day leftovers. My kids loved these so much they have become my go to recipe for enchiladas. Out of turkey leftovers? Use rotisserie chicken or pork shoulder instead.
