Notes about Recipes in this book

  • Double-crusted focaccia (Focaccia doppia)

I found this focaccia to be quite tasty. The recipe calls for 1/4 pound of sopressata. I would use a little more. The recipe says to roll the dough to a 16 1/2-inch round. I ended up making closer to a 12-inch pie, and it was as thin as the focaccia in the photograph.
