  • Berry slump

      I used fresh strawberries for this, only cutting each berry in half before mixing with the sugar. Quick, easy to put together, and tasty. It was sweet but the strawberries were tart enough to stand up to the sugar. The topping was scant, and I had to add a bit of milk to help make it spreadable over the strawberries, but the berry/cake ratio was good once it cooked up. I could see using all sorts of berries in this dessert.

      One of the best muffins I've ever made. Simple recipe without frills, although you really should add the optional nutmeg as it makes a improved difference. Not overly sweet and cake-like, but not cupcake-like, it makes a lovely brunch muffin.

  • Corn bread

      Not your common fluffy sweet cornbread, but a hearty corn-forward bread. Best cornbread I've ever had with chili, the solid bread soaks up the chili sauce/juices, whatever you call it, and perfectly complements it. It's very easy to put together, and only took 20 minutes in the oven. I took the option to add the bacon crumbled into the batter at the last moment, which just added flavor to the bread.

      A basic lentil soup recipe. Not bad but a bit bland. Next time I'd add in some peppers, maybe chili flakes just to perk it up.

  • Oatmeal cookies

      This are rather good, but they're more on the lace type cookies than the hearty drop cookies. I subbed the chocolate chips for raisins, and used the walnuts. They will spread on the sheet so don't skip on the 2" between the cookies on the sheet. Also, 12 minutes in the oven was way too long for my oven - a bit trial and error led to 8 minutes at 375F working the best.

  • Potato salad

      A very good basic potato salad. Steaming the potatoes seemed to help keep their shape better than boiling. While it has a variable amount of mayo for the sauce, I only used 1 cup which was plenty for the veg without swamping the salad.

  • Quick waffles

      One of the best quick pull-it-together waffle recipes I've ever made. Has nice fluffy waffles with the basic recipe, with plenty of ways to jazz them up if you're feeling fancy.

  • Roast beef hash

      Quick blueprint for beef hash. Cooking the potatoes in microwave wave in the beef stock - I used the liquid from cooking the roast the day before - before adding them to the fat to brown them was a wonderful idea.
