      Lovely cake, very apple-y. I was a little alarmed at first as there was so much apple and not a lot of cake mix but it all turned out very well. Not too sweet. Took 1 hour to brown to a golden crust at 160 fan. I used 50g of Truvia baking sugar instead of 100g caster sugar. Would make this again.

      I am always a little suspicious of recipes that have too many ingredients in equal measurements, it feels like they follow some formula and have never been perfected with a little more of this and a little less of that. This recipe is one of those and has too little oatmeal and too much sugar for parkin. From now on I'm sticking with the recipe in Mary Berry's Baking Bible.

      Made this for Halloween. It was delicious, but there's too much fruit, so we ended up picking burned raisins off the outside. The next time I make this, I'm going to halve the amount of fruit.

      This has been my go to cake recipe for a number of years. It is moist, delicious and gone in a flash. Seems it’s everyone’s favourite!!
