  • Corn & cheddar fritters with avocado, coriander & cumin salt

      Another delicious recipe for a midweek dinner. Loved the fritters and the cumin salt worked well for an extra bit of flavour. I decided to make the avocado salad from another cookbook even though it was very similar to the original recipe, adding some spring onions, lemon juice and a splash of Cholula, made it a little bit more tasty.

      I haven’t had a lot of success with focaccia, but this one turned out brilliantly. With flour being scarce I was very happy indeed. I made a few changes, I omitted the olives, and added the chilli flakes to the onion mix so they sat in the oil for a while. Will make again soon.

  • Barley 'risotto' with pine mushrooms & pancetta

      This was a healthy and delicious recipe. I couldn't find pine mushrooms so I used Swiss brown mushrooms instead. I also topped the risotto with some Oyster and King oyster mushrooms fried separately with some garlic, parsley and sherry. I love to do that when I make normal mushrooms risotto. The slightly chewy nutty texture of the barley is very different than that of a normal risotto, but I didn't mind it at all, especially after reading about the incredibly good health properties of the grain. However, hubby wasn't that impressed and prefers it in a soup, so I might not cook this recipe again, unless I cook it only for myself...

      I substituted a gewurtztraminer verdehlo for the chicken stock (transitioning vegetarian), and kale for baby spinach (fridge leftovers), went a bit lighter on teh chili than she suggest (1 long red is plenty heat enough for me!) - very tasty & definitely worthy of a repeat.

      This is unfortunately one of the recipes that I expected to be very tasty but in fact was quite boring to eat. A pity because I made enough to last us a couple of days. Yesterday I decided to add some fried chorizo and speck to bring in more flavour and it improved but not enough to make me feel like making it again. Oh well, this things happen sometimes.......

      Delicious! I put less stock in than the recipe suggested so it was not as wet as CarltonCaz commented. So tasty. I adore fennel. It was a relatively quick meal which I made after work.

      This was delicious and easy. It is a very simple one pot meal. Used slightly more risoni and about 800 grams of slightly smaller prawns. I also seasoned it with some chilli salt. Will make it again.

      This is my first recipe from this cookbook. It was easy and fast to prepare, and the result was amazingly good. I can see that it also could work out using hot smoked salmon instead of the trout. Will make it again for sure!

      This recipe is amazingly delicious. It takes a bit of preparation, getting all the elements ready, but nothing is complicated. I have changed a couple of things. I used small cuttlefish cut into thin slices and then cooked in a grill pan. I was told that if you put some salt on the pan, the fish doesn't get stuck, and it really works. I didn't add any salt to the seafood for that reason. I cooked the fish separately, but at the end, I put everything back to the pan and gave it a big stir and deglazed it, and it was delicious. Also, I cut the onion very thinly with a mandoline and put it in a large bowl with some salt and a splash of white wine vinegar and massaged it and let it macerate for about 30 minutes. We now always do this when we eat raw onion, especially at night. And finally, I halved the chilli flakes because we don't like it very hot. It was just perfect for us, being able to taste everything with a bit of a bite. This is a recipe that I'm going to repeat for sure.

      This dish needs you to be generous when seasoning it. An easy mid-week meal but I would double the salmon to properly serve 4 people and add some steamed veges to up the vegetable count.

      Nice, easy dinner. Didn't use zucchini flowers so just increased the amount of zucchini and served it with a potato gratin to bulk it out a bit.

      Delicious! A substantial salad perfect for dinner on a summer night. We added some roasted sweet potato to bulk it up (and because my beloved asked for some carbs), which was a good addition. The second time I made it I subbed fetta for the ricotta, also worked well. This is officially in high rotation in our household and I'll probably keep tinkering with it, its a great base.

      These were easy to make and not too sweet. The meringue frosting was a nice change from a butter frosting.

      A bit sweet. Maybe reduce the amount of sugar by about 20%. Particularly in the icing. I used mascarpone for the cream cheese. I also used fresh apple rather than tinned. Not sure why you would want to use tinned apples.

      A very nice cake that is very easy to prepare. No need for electric beaters which I’m always happy about. It is also gluten free which is a bonus. I used a 100 gram block of Lindt dark chocolate broken into chunks. It’s great as an easy dessert as well. Will make again!
