  • Glow green 30-minute pesto pasta

      I made too many changes to this recipe to give it a rating (a different pesto and cooking method for the vegetables) but I think adding extra vegetables to a pasta with pesto sauce will always taste good. The lemon juice at the end lifted all of the flavours. I will make this again as written once I get my hands on some pepitas.

  • Weeknight Tex-Mex quinoa with cashew sour cream

      This was a tasty dish with family friendly Tex-Mex flavours that required mainly pantry items. The sweet potatoes and quinoa were done at the 23 minute mark but there was still some liquid so I removed the lid, raised the heat and cooked it off quickly. The recipe leaves a lot of room for customization of heat level, toppings etc; I added frozen corn and topped with tomatoes and cucumber. I substituted dairy sour cream for the cashew cream.

      These are the best PB squares we’ve had in a while! I am making them for the second time by popular request. I highly recommend making the PB drizzle and chocolate sauce for freezer fudge too!

      This dish is always in rotation at our house. Quick to make (as long as you have the spice mix made ahead of time) and really delicious. I've used kidney beans instead of black beans, and they are equally good. Use this as a filling for tortillas, a topping for nachos or baked potatoes or wedges, or with rice. Very versatile.
