Notes about Recipes in this book

  • Rainbow summer rolls

    • bwhip on July 26, 2018

A delicious, light, interesting and colorful recipe for a hot summer evening. Prep took a bit of time with all those ingredients, but the result was very attractive and tasty. My first time making spring (summer) rolls, and it was easier than I expected to create them.

    • Partyof7 on July 16, 2019

So good! Subbed shrimp for the mango for my husband. Served for dinner for 6, so everyone rolled their own. The dipping sauce is so much more than a peanut sauce. Complex and delicious! A perfect summer dinner without using a stove or oven.

  • Pea pesto and burrata crostini

    • bwhip on July 26, 2018

These were great. The pea pesto was delicious. Burrata seemed to be out of stock everywhere around here, so we used fresh buffalo mozzarella instead, and it worked fine. We topped it with some nice microgreens. We made these as a light dinner entree on a very warm summer evening.

  • Pepper Jack bean dip

    • Xyz123 on October 21, 2019

      This was excellent!

  • Cucumber dill tzatziki

    • Partyof7 on March 17, 2026

      Perfectly delicious

  • Strawberry, pineapple, and coconut smoothie

    • julesamomof2 on August 22, 2018

Delicious, we love trying out new smoothie recipes and this one is a keeper !

    • hbakke on April 05, 2022

Delicious fruit smoothie. It was a bit too thick for my blender so I added more coconut water.

  • Blueberry bliss smoothie

    • hbakke on April 07, 2022

Delicious! I added a sprinkle of toasted wheat germ on top for some added texture and nutrition.

  • Avocado toast with bacon and a fried egg

    • southerncooker on March 24, 2022

I used sourdough bread and precooked chicken bacon. I didn't have micro greens.

  • Mango tuna poke bowl

    • bwhip on August 16, 2019

These are excellent, just a perfect blend of flavors and textures. Nice and light for a summer evening. Super quick and easy too. The mango really puts it over the top, adding just the right amount of silky sweetness. The dressing is excellent. Only change I made was using brown rice. We'll definitely have these again.

  • K-town beef bowl with kimchi

    • EmilyR on August 19, 2021

I used short ribs but that was the only thing I changed. The layers of flavor are interesting, though I wanted the rice to be more exciting, so it might benefit from a drizzle of sesame oil or hoisin. I'm going to use the leftovers for a David Chang inspired Ssäm burrito.

    • sophieca on October 16, 2023

Lots of work but worth it!

  • Chimichurri cauliflower rice bowl with grilled fish

    • bwhip on June 13, 2019

Excellent dish, light and flavorful. The cauliflower “rice” with salsa verde was a lovely upgrade to traditional rice, and the pineapple mango salsa was the perfect accompaniment. I used halibut as the fish, and it was delightful.

  • Chicken larb bowl with coconut rice

    • EmilyR on May 02, 2023

This is a simple and flavorful meal that is relatively quick and healthy.

  • Green rice burrito bowl

    • Partyof7 on May 27, 2023

I’ve made a lot of burrito bowls, but this one stands out. The cilantro rice is a really nice addition. I added 3 grilled, diced chicken breasts and the entire family raved about it. We thought a sliced avocado would be preferable to the guacamole, but the guacamole was nice. On repeat. Edited to add: have also added beef barbacoa and it’s fabulous.

  • Chicken tzatziki bowl

    • Partyof7 on March 17, 2026

I love everything Greek and this recipe delivers along with tzatziki

  • Sesame-miso market salad

    • bwhip on February 15, 2020

Great salad. Light and refreshing, and the dressing is delicious. I used a Cara Cara orange instead of mandarins because I didn’t want to buy a whole bag of them.

  • Spring Cobb with asparagus, artichokes, and avocado

    • bwhip on March 27, 2019

Delicious salad, perfect for spring, with a nice mix of flavors. I added a couple of hard-boiled eggs to make it just a bit more Cobb-y.

  • Fall Cobb with sweet potatoes and beets

    • Partyof7 on October 24, 2024

      Yumm. Very very good!

  • Winter Cobb with pomegranates

    • Partyof7 on October 24, 2024

      P. 91 Really delicious! Adding the butter to oil for the croutons produced a different and delicious crouton. I subbed bacon for the pancetta and served along crispy chicken strips. Roast turkey would be a tasty addition.

  • Mom's every night cucumber salad

    • Partyof7 on March 17, 2026

I love this salad and often rely on it when I need a quick, low-lift side dish. Sometimes add minced red onion or roasted garlic.

  • Lemon shishito peppers

    • southerncooker on July 09, 2021

Used shishito peppers from my farm share. Quick, easy and delicious.

    • Maefleur on May 02, 2026

      So simple and very tasty!

  • Crispy Brussels sprouts

    • Partyof7 on October 24, 2024

Fine, good but not my favorite way to prepare Brussels.

  • Lazy girl chicken enchiladas with cumin crema

    • laur0684 on January 19, 2019

Super easy and fast enchilada recipe! On the milder side so good for kids as well. Have made a few times now and it’s always well received

    • fultre on August 24, 2025

Loosely followed this recipe. Due to fridge & pantry cleanout, my enchilada filling was sautéed mixed greens, and canned chicken, corn, mushrooms and black beans, in place of rotisserie chicken and refried beans. Made enchilada sauce from Lukas Volger Start Simple. Skipped cumin crema. Nice flavorful recipe that stood up well to substitutions.

  • Blackened shrimp skewers

    • VegasCook37 on May 11, 2026

Made just 1 pound of shrimp. Spice has a little kick. It was nothing exciting but good flavor.

  • Fish tacos with pineapple-mango salsa

    • Partyof7 on September 25, 2022

Wow! This works! A simple slaw, chipotle sour cream and a juicy fruit salsa. A delicious nearly perfect fish taco. We used mahi-mahi. I will say, it’s just not as good the next day.

  • Taco skillet bake

    • sstyles on April 28, 2018

This recipe came together quickly and was delicious. It looks like a long list of ingredients but its mostly herbs/spices you would have in your pantry. I had my son measure them out for me while I started on the prep and we had dinner on the table in no time. Will definitely make again.

    • kristin_6n526s on April 22, 2026

Pretty good! I would definitely make it again. Quick and easy and calls for ingredients I usually have on hand. Made a LOT and there are only two of us, so after we eat some for lunch I will freeze the rest. I think it should freeze well. Next time I’ll add some Fritos!

  • K-town melt-in-your-mouth baby back ribs

    • Running_with_Wools on January 12, 2024

Absolutely delicious and we didn’t take the time to let these sit with the dry rub. The pickles were delicious and so was the sauce. We’ll definitely make these again. Kids loved them, too.

  • Santa Maria tri-tip with salsa and guacamole

    • Xyz123 on October 28, 2019

      Delicious rub

  • Cedar plank salmon with blistered tomatoes

    • bwhip on June 30, 2019

Loved this. I thought the idea of soaking the planks in white wine was a great touch. The combination of flavors was fantastic. Light, easy, and really good. Looking forward to making this again.

  • Pulled pork pizza with cabbage slaw

    • sstyles on April 28, 2018

This is a really good pizza and comes together really quickly if you made the pulled pork burgers earlier in the week and had leftover pork and slaw like I did. Just make sure to put some BBQ sauce aside before cooking the pork.

  • Cheesy pulled pork sandwiches with jalapeño slaw

    • sstyles on April 28, 2018

This is another delicious recipe from Gaby. I didn't have time to use the slow cooker so I cut the pork into 3 pieces and pressure cooked on high for 50 mins with natural release and it was perfect. Just make sure to save some of the bbq sauce at the beginning so you can make the pulled pork pizzas with the leftover pork and slaw.

  • Sun-dried tomato turkey burgers with balsamic onions

    • bwhip on August 03, 2018

These were really tasty burgers. I made my own balsamic glaze with this recipe (cut in half): https://www.allrecipes.com/recipe/228418/balsamic-glaze/, and it was quite good. Only substitution otherwise was Jarlsberg cheese in lieu of mozzarella.

  • Chicken Parmesan pappardelle

    • Partyof7 on December 28, 2020

So yummy. So delicious. Easy prep. My 17 yo son could eat it every week.

  • Giant Pavlova with lemon curd, Chantilly cream, and fresh berries

    • Elaine115 on February 08, 2023

Over the top delicious! Meringue came out perfect by leaving in oven overnight after it was done to cool. Did not use super fine sugar and just beat egg whites and sugar until smooth and not grainy. Followed Gaby’s instructions to rub the mixture between your fingers to see if it feels gritty. Used lemon curd from Trader Joe’s and it was perfectly tart mixed with the sweet whipped cream.

  • Raspberry-white chocolate cheesecake cookie bars

    • estanzler on September 06, 2024

These turned out great. I thought the cookie dough came out more moist than I was expecting but once it cooked, it was fine. Would definitely make again.

  • Meyer lemon bars

    • janelyra on February 01, 2021

I needed 5 medium-large lemons to produce the zest / juice called for.

  • Lemon-Champagne vinaigrette

    • Partyof7 on October 24, 2024

Very nice and complemented the Winter Cobb salad well. I added a teeny bit of Dijon for emulsification and found it benefited from a spoonful of honey.

  • Homemade BBQ sauce

    • sstyles on April 28, 2018

This is the best BBQ sauce I've made. I like the fact it doesn't have loads of added sugar as it uses mango for added sweetness. It is used to cook the pulled pork recipe.

    • Cassondra on January 11, 2026

I used frozen chopped mango - I added it frozen (no thawing) straight to the saucepan. Turned out great! I also used my immersion blender which was easier for clean up.

  • Mustard-herb vinaigrette

    • Partyof7 on March 17, 2026

      So good on a salad

  • Pineapple-mango salsa

    • Partyof7 on March 17, 2026

Soooo good on her fish tacos

  • Salsa verde

    • VegasCook37 on May 11, 2026

Easy sauce that goes with a lot of meats, veggies.

Publishers Text

In What’s Gaby Cooking Everyday California, Gaby Dalkin shares more than 125 of her favorite simple and fresh recipes and offers a glimpse into what it’s like to “go coastal.” It’s about always having something tasty to eat, thanks to handy and delicious pantry staples (avocado oil! quinoa! limes! dark chocolate!), as well as an arsenal of easy and healthy recipes, like Chimichurri Cauliflower Rice Bowl with Grilled Fish, Taco Skillet Bake, and Street Corn Pizza. The book covers all the staples—avocado toast, grain bowls, greens, carbs, healthy mains, cocktails, and more.

For Gaby, California is not so much a place but a state of mind, and this cookbook proves that no matter where you live, you can still apply the same philosophy. All it takes is finding the freshest produce you can, stocking up on some versatile pantry staples, and keeping flavors and techniques simple. After that, the only thing left to do is kick back, pour yourself a California Girl Margarita, and listen for those ocean waves.
