      Visually striking dish with sweet and sour flavors. Comes together easily but peeling the beets is messy. Works well hot or at room temperature. Subbed balsamic for cabernet vinegar.

      This is DELICIOUS! For the final presentation I serve it on a big platter instead of a salad bowl so I can distribute the heavy pieces (chicken, citrus segments) perfectly throughout. So that means I keep the chicken breasts, citrus segments, and pistachio sauce aside. I pile the dressed lettuce + veg mix on the platter (or individual plates) and then place the chicken and citrus into it with tongs. Finally, I put the pistachio sauce in a sandwich bag and drizzle little squirts of it throughout. The pistachio sauce is BOMB and your eaters may be asking for more more more.

      Hadn't seen Iberico pork loin before, you can depend on Costco for something different! This simple recipe shows it off to good advantage. Pork has a very nice flavour.

      I was able to use iberico pork for this recipe. Waitrose (UK) stock it. It's my favourite type of pork as it's so tender. A very simple and easy recipe.

      Wrapping the roast with the marinade in foil produces a delicious piece of meat. Mine needed to roast half an hour longer than the 3 hours stated in the recipe to be really tender, however, really good. Served with roasted potatoes and my favorite red cabbage salad with oranges.

      Great flavor! Make sure to add the salt to the marinade (it’s in the instructions, but not the ingredient list).

      Delicious, even though due to time constraints I cooked the orzo separately in the broth, and incorporated it just before serving. It still looked great, and the veggies did not need the full amount of time in the recipe- at least for my taste. Yes there was an additional pot, but that wasn’t really a bother. Made great leftovers.

      Excellent, low effort to outcome ratio! Potentially dinner party worthy, the parsley and caper sacue elevate the whole dish to something special!

      This was very good and quick to prepare, halved the amounts as I was just cooking for myself. I should have used a larger pinch of saffron as there wasn't much colour. I'll remember that if I cook it again!

      Cooking times a little short, make sure the rice is well cooked.
