      Another tasty version of winter vegetable speltotto from River Cottage. I topped it with walnuts and feta to add a little salty taste.

      Substituted the veg for what I had in the house. Used carrots, beets, red cabbage and spring onions. After the first hour of cooking I removed the top layer of fat from the meat. Next time I think I'll put the star anis in a pouch because it's not nice to chew down on after it breaks into bits. Looked a bit of a state in the end but was very, very good.

      This didn't work for us. Cooking the apples down first resulted in a crumble with overcooked apple puree. I wish I'd just chopped up the apples and put straight in the dish. I made the crumble with coconut oil and thought it was okay, but not my favourite crumble mix (though the 7yo ate it without the apple and thought it was great). It didn't brown much and didn't look appealing to me. Lastly, the recipe uses a lot of apples (1.5kg) and next time I'd probably halve that, but don't think I'd repeat anyway.

      The taste is great, but I find the texture too crumbly. Will try adding an egg next time, or maybe a flax egg if I want it to be vegan. The sugary tahini topping is great!
