  I’ve made both the Escabeche and the Catfish sandwich. They’re exceptional. I subbed the tuna with salmon in the Escabeche for a lower mercury content. This recipe is really not that demanding when you actually do it. The Piklik for the catfish sandwich as well as the aioli is restaurant quality. The rub on the fish equally superb. I used tilapia instead of catfish.

    This was so incredibly good! I marinated the pork overnight and followed the recipe exactly as written (except leaving my pork shoulder in the oven for longer since it wasn’t fork tender yet) and the flavors were incredible. Leftovers were even better the next day.

    This is an excellent recipe except the timing, I also need to cook it longer. I did the fresh pineapple and it was excellent along with diced fresh onion. I will make this again.

    This was the first recipe I made from this book and unfortunately it has an error. The weight measures are off (the 135g needs to be doubled) for the 2 cups of P.A.N. masarepa. They turned out fine after I realized the issue, but I hate things like this overshadowing the success of the recipe.

    First off, the biscuit recipe alone is banger. Will be my go-to from now on. Second, you can microwave chicken thighs if you don't want to use rotisserie chicken. Also, it would be super easy to add whatever additional veg you have on hand, like green beans. Same goes for savory herbs.

    Added pickled jalapeños, broccoli and Aidell's mango jalapeño chicken sausage. Very good. Dijon mustard added an extra tang that Coleman's dry mustard doesn't have.

    I used canned everything, though I’ve made this with fresh tomatillos to great success. You can also use chicken!

    This one is a winner! The cumin-goat cheese cream really makes the dish. Lovely with rice or couscous on the side. This will be a recipe I reach for when I need to use up a bag of spinach or some bell peppers that might be past their peak but can still become something delicious with the right treatment. I might try adding some zucchini to this recipe as well.

• Guatemalan radish and chicharrón salad [Chojín]

    Easy recipe, almost entirely prep. Used cotija for the cheese. Would recommend adding the chicharrón individually to each serving instead of mixing it in at the end, since it’s hard to eat an entire bowl of salad “immediately” so they stay crunchy.

• Purple sweet potato haupia bars

    I've had this in Hawaii and this recipe isn't super sweet, which I liked. The spices are reminiscent of a less sweet pumpkin pie. It's better than something you can get at FoodLand or Times Supermarkets. I've previously made dark chocolate haupia, which is in a league of its own and more accessible than finding these beautiful purple sweet potatoes, though I was very fortunate to find them at a local grocery to try this recipe. These things are massive - as in over 2 Lbs heavy. For the more delicate texture, I used a potato ricer and made individual portions in glasses to show off those beautiful layers.
