    a bit of a hazzle to fry the potatoes ( I fried them way longer - 10 -15 minutes), but it'worth it : great recipe!

    My eggplant hating partner said "this is the way to cook eggplant," meaning that it as obscured. The recipe was very heavy on the cumin. Cooked for the amount of time it calls for, the tomatoes would still be quite raw, so next time I might start from a premade onion-tomato gravy.

• Potato curry

    Not really sure what the chana dhal and white urid dhal added to the curry .. only a teaspoon of each needed! The curry was mild but very tasty, and the puris that we made to go with were excellent & easy!

• Fluffy rice and lentil cakes with cashews, coriander, chillies and spices (Kanchipuram idlis)

    Excellent recipe, everybody loved it! Nice with coconut rice - I used recipe by Hopkinson.

    Fresh corn takes it to another level. I would definitely not make it with tinned or deep frozen corn

    Not worth the trouble. His web site has a video of a variant of these, which explains the cutting & rolling process much better than the recipe!
