  • Salmon fish cakes

      p. 112 - True comfort food, these salmon cakes reminded me of those of my childhood. Simple and very tasty. Assuming you have leftovers, these come together in no time and make for a delicious weeknight meal. I used leftover roast salmon and plain breadcrumbs. I decided to serve these atop a tomato butter sauce I’d seen in one of my Italian cookbooks – CUCINA SIMPATICA. The fish cakes were the star of the show. mr bc enjoyed the leftovers for his weekday lunches. He ate them cold though I do think they’d be better heated. I’d make these again.
