Notes about Recipes in this book

  • Slow-roasted tomatoes

    • kbrooks on February 18, 2025

The roasted tomatoes are good in omelets, salad.,sandwiches etc. Even good snacking.

  • Vegetable stock

    • vhopcroft on May 19, 2011

This is my new go-to vegetable stock. The tarragon adds lovely flavor!

  • Vegetarian chili

    • kbrooks on February 18, 2025

Delicious veggie chili. We add fresh corn kernels when corn is in season. Top with shredded cheddar or Monterey Jack, sour cream, sliced green onions and/or hot sauce.

  • Slow-roasted tomato soup version 1

    • kbrooks on May 02, 2026

Roasting the tomatoes adds so much rich flavor to this soup.

  • Corn chowder

    • kbrooks on February 18, 2025

Really tasty chowder. We prefer pork bacon instead of turkey bacon. Adding the corn cobs to the simmering stock adds a lot of flavor (cut the cobs in half to better fit in the pot.)

  • Miso dressing

    • vhopcroft on May 19, 2011

Delicious! I add a little less white miso now as I found it a little overwhelmingly salty the first time I made this.

    • Wende on April 13, 2022

As miso dressings go, this was not one of my favorites. The balance seemed off - maybe less onion and garlic? Normally, a dressing with this much umami going for it would have me almost drinking it. I might try it again, but not without some serious tinkering

  • Balsamic and lime vinaigrette

    • kbrooks on February 18, 2025

Increased the balsamic vinegar to 3 tablespoons and the lime juice to 2 tablespoons for a better balance.

  • Standby vinaigrette

    • TanyaPaquet on June 23, 2013

I add an additional teaspoon or two of maple syrup.

    • TanyaPaquet on June 30, 2013

      See p. 69

  • Chive vinaigrette

    • Frogcake on August 23, 2019

Good vinaigrette! I will keep this one in my back pocket.

    • kbrooks on May 02, 2026

      Okay vinaigrette.

  • Classic chopped salad

    • kbrooks on February 18, 2025

      Awesome! Made exactly as written.

  • Italian chopped salad

    • kbrooks on February 18, 2025

Great dressing! Made the salad with buratta. Used maple syrup instead of agave nectar. For variety add slivers of salami or prosciutto.

  • Cold Niçoise salad

    • Frogcake on August 23, 2019

Very nice served with the chive vinaigrette! I will be making this Niçoise salad again! I added roasted carrots and olives to the mix. Excellent salad!

  • Lobster club salad

    • kbrooks on February 18, 2025

Really delicious. Made with lobster tails as Maine lobster isn't as available here on the west coast.

  • Panzanella with roasted peppers, tomatoes and basil

    • kbrooks on February 18, 2025

I love bread salads and this is a good one.

  • My Ivy chopped salad

    • Mollyh on July 13, 2013

Used striped bass and it was still AMAZING.

  • Cheesy stuffed burgers

    • kbrooks on February 18, 2025

Terrific. Have made this with Ground beef and with ground turkey as well as a combo of both. All work. Have used blue cheese, gruyere or cheddar. Again, all work. Served on homemade KAF beautiful burger buns.

  • Spaghetti alla vongole

    • rleemcm on May 13, 2017

Our go-to recipe, have made this countless times!

  • Duck ragu

    • kbrooks on February 18, 2025

Can't believe EYB indexed this as quick and easy. It is neither. Having said that, this ragu is Wow Terrific! Well worth the time, effort and clean up. Perfect special occasion dish.

  • Gremolata bread crumbs

    • kbrooks on May 02, 2026

Tasty gremolata to use on a variety of dishes.

  • Chicken Milanese

    • adrienneyoung on September 29, 2011

I am feeling very uncharitable feelings toward Ms. Paltrow at present. This is the recipe that has taught me that I do NOT know how to pound meat. I have shredded bits of chicken all over my kitchen counter at present. And two VERY small residual chicken breastlets to milk and breadcrumb for our dinners, once the cherry tomatoes have finished roasting. Hmph. Phooey, I say. Also, needs to be more aggressively seasoned than I managed. Maybe salted a couple of days in the fridge, per zuni cafe cookbook?

    • kbrooks on February 18, 2025

Easy and delicious. Salt and pepper the breasts after pounding them and let them rest in the fridge for 1/2 an hour or so. Add some dried basil and or oregano to the panko crumbs.

  • Chicken Milanese with slow-roasted cherry tomatoes and arugula

    • kbrooks on February 18, 2025

Good variation on the basic chicken milanese recipe.

  • Best stir-fried chicken

    • kbrooks on May 02, 2026

Not too sweet. Not too sour. Quick and easy. Much better than takeout.

  • Pico de gallo

    • kbrooks on February 18, 2025

Good pico de gallo. I add minced jalapeños. Nice side for fajitas, quesadillas etc.

  • Quick pimenton aioli

    • kbrooks on May 02, 2026

Nice bright aioli to use in a variety of ways.

  • Ten-hour chicken

    • andreathurm on February 16, 2016

I rarely comment, but here goes. I looked for such a recipe after eating a 10-hour chicken in Madrid and was very excited to find this touted by and reproduced by some bloggers. Alas, it did not measure up. The breast was dry despite all of the braising liquid, and unfortunately, dousing it with the broth was not a satisfactory solution because cooking lemons for this long made the broth bitter. The chicken I had in Madrid was much smaller - a poussin - and was butterflied before cooking. I think both differences are significant and will try the recipe again. Regardless, stuffing the chicken with the lemon halves is not a good idea.

  • Broiled salmon with homemade teriyaki sauce

    • jay.moe on March 04, 2022

After marinating the salmon for 2 hours, it had a subtle teriyaki flavor. I was afraid to let the fish marinate too long as it might affect the texture. The texture and flavor were great. I grilled the salmon outside rather that in the oven, which made for a fast meal with easy clean up.

  • Sautéed greens with onions and soy sauce

    • kbrooks on February 18, 2025

      Delicious.

  • Maple-Dijon roasted winter vegetables

    • kbrooks on August 20, 2024

This is an easy and versatile side dish. Make it with any combination of veggies as suggested. Not just for winter. Works beautifully with just young spring/summer carrots alone. Can also be nice with quartered onions added in.

  • Caramelized Brussels sprouts

    • kbrooks on February 18, 2025

We love Brussels sprouts. Making this with bacon fat instead of olive oil makes it really bacony.

  • Fried rice with kale and scallions

    • Elnara on February 13, 2014

I really liked this recipe. It's a great way to use up extra kale and get it in the kids. The soy sauce makes this dish, it brings all the flavours together and makes it yummy. Will make again!

  • Bruce's dip

    • kbrooks on February 18, 2025

Yum. Great on avocados, cold chicken, dip for crudites, artichokes, as a sandwich spread.

  • Fragrant jasmine rice

    • kbrooks on May 02, 2026

The star anise and cardamom contribute nice flavor notes to this simple rice.

  • Slow-roasted tomato, basil and smoked mozzarella frittata

    • kbrooks on February 18, 2025

      Used smoked gouda. Delicious.

  • Leek and Gruyère frittata

    • kbrooks on February 18, 2025

Doubled the amount of gruyere. Very good frittata.

  • Spiced apple crumb muffins

    • jkhest on April 19, 2026

This only shows a portion of the ingredients. Incomplete list

    • jkhest on April 19, 2026

Missing ingredients in the CookShelf list

  • Blythe's blueberry muffins

    • julia_kigfyo on March 14, 2026

Easy and delicious. I’ve made these a ton. Kids love them. They are best hot.

  • Healthier version of the blueberry muffins

    • sarahcooks on November 12, 2012

I was very skeptical, but these were delicious and the kids loved them too. I used regular milk, and I had to use more agave for some of the maple syrup (I ran out) but otherwise I followed the recipe. I'm sure they're delicious as written too.

  • Blythe's savory bread pudding

    • kbrooks on February 18, 2025

Nice flavor but very dry. Would recommend increasing the amount of custard and/or decreasing the amount of bread. Probably won't make again.

  • Mutti's pecan butterballs

    • kbrooks on February 18, 2025

      Wonderful holiday (or anytime) cookies.
