      p. 20 With some beautiful blue and yellow fingerlings in mind, I went in search of a grilling recipe and and EYB search landed me on this dish. This was the first use of this recipe and book and I’m happy to report that this recipe is a keeper! The potatoes crisped up nicely on the grill and the smoky, herby flavour paired perfectly with the grilled NY strip steaks. Very easy to execute. Potatoes are boiled til fork tender then smashed and brushed w an evoo/garlic mix (to which I added some crushed garlic). Potatoes are finished over the coals then seasoned.       This is one of my go to grilling recipes. The Feta sauce is sooooo good. The feta sauce is also amazing on lamb burgers.

      The grilled pineapple salsa is wonderful. I’m usually not a fan of fruit salsas, but this was great. Grilling the pineapple made a big difference giving the salsa the right texture and sweetness. This salsa had a lot of liquid and next time I will cut the amounts of olive oil, rice vinegar and lime juice in half. I used halibut instead of swordfish. I think it would work with any firm white fish. I will be serving this dish to company this summer.

      I make this often and have tweaked it to perfection. There is too much liquid in the recipe. I keep the lime juice as it and cut the vinegar and olive oil in half.

      This was perfectly okay, but not great. I didn’t use the grill/oven method, but moved the chicken to indirect heat to finish cooking. I didn’t find them spicy or super flavorful. One the fence whether I will make again.

  • Caribbean pork tenderloins

      The pork did not have much flavor for all the ingredients in the marinade. It was fine, but not anything special. The grilled pinapple salsa is a wonderful addition and took the dish to “good.” I have better marinated pork tenderloin recipes so probably won’t make again.

      I have revisted this recipe a couple of times tikis summer. The recipe is missing salt. Generously salting the pork tenderloins before grilling makes a difference. This is a great grilling recipe to feed a crowd economically. Serving it with the grilled pineapple salsa from this book in a great combination.

      I made these for a friends birthday dinner (by request). These are the best and worth owning this cookbook for this recipe alone. It is a recipe I make over and over and always to rave reviews. As a bonus it is super easy.
