      I got lazy and used my handheld whisk mixer instead of the stand mixer and that was mistake as this turned out a little 'gummy' for lack of a better term. It also was a little light on the lemon. I would make this again though for sure as other had positive reviews.

      Substituted apricots. Made in a 6 cup Bundt pan and two mini loaves, adjusting the time as needed for the respective pans.

      Nice enough but won’t be making it again. it was quite dense and rich. the notes say not to worry if it makes too much batter the bundt won’t overflow but i think this added to the unpleasant dense texture. i could only eat a few bites at a time
