Notes about Recipes in this book

  • Soy balsamic sauce

    • sydlikestocook on March 19, 2024

Very easy. Make ahead of time so you don't have to wait for it to cool down.

  • Korican sauce

    • Stephenn31 on June 02, 2024

Used this to marinade pork and it was flavourful

    • sydlikestocook on June 03, 2024

Delicious, easy to make. Used to marinate pork chops.

  • Nuoc cham sauce

    • Stephenn31 on June 02, 2024

Used as a base for a chimichurri sauce for Korican pork chops

    • mlbatt on July 16, 2024

I made this as part of the Korean Baba Ganoush recipe, and have since used it in a salmon salad from Melissa Clark on the NYT Cooking site.

  • Curry salt

    • mlbatt on July 16, 2024

Made this as part of the Korean Baba Ganoush recipe. It's a great seasoning blend that I've used on fish fillets and other proteins. Really a great addition to my seasoning arsenal.

  • Korean baba ghanoush

    • mlbatt on July 16, 2024

Made this for cookbook club. I wasn't sure it would go over, but after a taste (or two or three), it wasn't overly spicy as I had feared, but had a great kick. The black beans (I used well-cooked Rancho Gordo Midnight Blacks instead of canned) really gave it a creamy texture. I would definitely make this again for my next get-together.

  • Korean BBQ skirt steak

    • Stephenn31 on April 26, 2026

This was excellent especially on the grill. There was a lot of marinade so some is in the freezer. There was a sale on LA galbi so I made that with Korean American bbq sides from the book. Delicious! A lot of component parts to all the recipes but good for a weekend project

  • Koricanpork chops

    • Stephenn31 on June 02, 2024

Flavourful. Definitely make the chimichurri sauce as well which I also put on roast potatoes

    • sydlikestocook on June 03, 2024

Another winner from Bill Kim. The sauce was a little salty but overall delicious.

  • Slow-grilled Korican-style baby back ribs

    • jzanger on July 01, 2020

Wow, these were incredible. Trust in Bill Kim! This is not only a crazy delicious combination of flavors but it uses a brilliant technique which resulted in the most tender ribs we’ve ever grilled.

    • Stephenn31 on August 11, 2024

Delicious ou tender and juicy ribs. Don’t shy away from the garlic - it just cooks down and makes for more deliciousness. I made the marinade and put it on the ribs then wrapped them in aluminum to marinade, then put the foil onto the bbq. I will do ribs like this again

    • hharts on August 04, 2025

Pretty obsessed with this recipe! So flavorful. It also freezes well, uncooked, in the marinade. Excellent served with rice and the cucumber red onion salad from this cookbook.

  • Korean al pastor

    • lizbot2000 on May 28, 2018

This was great! We added some gaba rice to the lettuce wraps, and they were perfect. That extra chewiness really helped, but it was still pretty good as written. A really excellent summer dinner.

  • BBQ spiced chicken thighs with yogurt nuoc cham sauce

    • dosojosazules on November 25, 2022

This turned out pretty well. The nuoc cham yogurt dipping sauce is a great foil to the spiciness of the chicken

  • Kaffir lime curry chicken

    • lizbot2000 on May 28, 2018

This was SO good. I finally got a kaffir lime tree for Mother's Day, and this was my first recipe I made using its leaves. It would probably be good without them, but it was really excellent with them. We made the cucumber quick kimchi from the same book as a side and served it all on top of rice. I'll definitely be making this again.

  • Korean BBQ salmon

    • sydlikestocook on December 10, 2023

Made 1.5 lbs instead of 3 lbs of salmon but kept the veggies as recipe called for. Only used 1 cup of BBQ sauce instead of 3. cooked on the blackstone. Added in bean sprouts to the veggie mix - would definitely do again if using the recipe as a full meal.

  • Trout with citrus nuoc cham butter

    • FritB on March 12, 2019

      The butter was delicious

  • Gun bae soju scallops

    • sydlikestocook on March 19, 2024

My only regret is that I didn't have more scallops to eat. We did use soju, but since the recipe only calls for 2 TBSP, would likely sub vodka or rice vinegar next time as suggested if we didn't have it on hand.

  • Sizzling soy balsamic portabello mushrooms

    • sydlikestocook on July 16, 2024

Delicious! Like teppanyaki mushrooms on steroids. Used baby bella mushrooms instead of portabella mushrooms and scaled down to 1/3 recipe.

  • Gochujang asparagus

    • lizbot2000 on May 28, 2018

Not bad at all. I think we didn't cook ours long enough, so be sure to get yours good and charred. The smaller ones were much better than the fatter ones that were less charred.

    • Stephenn31 on June 09, 2024

He chat was nice and balanced with the sauce. Don’t over salt the asparagus before grilling

  • Cucumber onion kimchi

    • lizbot2000 on May 28, 2018

Good, but a little sweet. I'll add more chilis next time, I think.

    • Stephenn31 on June 09, 2024

Not my favourite version of this. Felt like something was missing. Will try again though

    • hharts on August 04, 2025

My favorite cucumber salad recipe. Have added in lemon cucumbers from the garden when I have them to great effect. I think it really needs a mandoline for consistent cucumber and red onion slices.

  • Korean coleslaw

    • Stephenn31 on April 26, 2026

Lots of components but excellent flavours. I would add more peanuts next time. (I did a shortcut of just frying them up in garlic and olive oil instead of the full underlying recipe). Make sure the cabbage is thinly sliced

  • Kimchi potato salad

    • Stephenn31 on April 26, 2026

I really enjoyed this as a change from a vinegar or mayo based potato salad. Lots of flavour and pretty easy

  • Hoisin baked beans with bacon BBQ crust

    • Stephenn31 on April 26, 2026

A fair bit of work (I cheated and just added the soy and balsamic with the hoisin instead of reducing it first). But surprisingly delicious and I’d make again. More savoury than a lot of baked bean recipes which I enjoyed

    • patrick_qrpwvs on May 30, 2026

This was extremely good and really not THAT much work. I had to cook the bacon way longer than the recipe suggested to get it crispy and to release the fat (maybe 15 mins at induction level 6). The flavor of the dish is incredible! One of the best baked beans recipe ever! 9.5/10.

  • Coconut chocolate pudding

    • mlbatt on July 16, 2024

Made this for cookbook club and used the optional gochujang. It's a super easy recipe. Comments from the crowd: a winner, very rich, it was delicious!

Publishers Text

A casual and practical guide to grilling with Korean-American flavors from chef Bill Kim of Chicago's award-winning bellyQ restaurants, with 80 recipes tailored for home cooks with suitable substitutions for hard-to-find ingredients.

Born in Korea but raised in the American Midwest, chef Bill Kim brings these two sensibilities together in Korean BBQ, translating Korean flavors for the American consumer in a way that is friendly and accessible. This isn't a traditional Korean cookbook but a Korean-American one, based on gatherings around the grill on weeknights and weekends. Kim teaches the fundamentals of the Korean grill through flavor profiles that can be tweaked according to the griller's preference, then gives an array of knockout recipes for feeding friends and family, such as Hoisin and Yuzu Edamame, Kimchi Potato Salad, and Kori-Can Pork Chops.
