  • Easy spiced scramble

      Tasty take on a tofu scramble (I’m about to nickname this book, “Mush Meals”)! I enjoyed the adding of silken tofu/nutritional yeast on top of the regular tofu + chickpea mix. I don’t own a bullet blender. The small amount of silken tofu/nooch didn’t work great in my Vitamix, but we got it done. If I had one gripe it would be that we don’t use the entire block of tofu or silken tofu. Will probably just throw it all in next time. Topped with some peppers from my garden, broccoli sprouts and sriracha. Will repeat!

  • Tahini, coconut and cinnamon crunch granola

      not one of my top favorite granolas I’ve made, but tasty! Set oven to 350F. Skipped the coconut sugar. Chopped my nuts up a bit. Waited to mix golden raisins in until granola was out of the oven and cooled. Baked for 18 minute, but will go for 17 next time if I remake.

      very tasty. I much prefer hot oats to overnight, but they are great to grab on a busy morning. 70 carbs is a lot in the AM for my T1D self. Next time I’ll try the following adjustments: skip the date + down to 40g oats to help the macros a little.

      Love these. Had to play a little with the measurements to get the texture right, and I couldn't find jumbo oats (I'm in America, so maybe they're a UK thing), but these are perfect.

      Pretty good! I adjusted the measurements slightly to better match up with my personal macros. I still prefer hot oats, but was on the road over breakfast and this was perfect for in my car after the gym. Next time I will add some frozen berries on top!

      I thought this was tasty! I added the frozen banana and used coconut water instead of water. I also added more ice than it said. I wouldn’t normally add that large of a quantity of oats to my smoothies, but I thought it came out nice!

      quite good! I wasn’t sure if ground almonds = almond flour, but that’s what i decided to go with. Subbed peanut butter for almond since that’s what I had on hand. I recommend using a wet hand to mix as the dough is quite sticky. Perfect snack before early AM exercise!

      Ehhh…the type of recipe that I will eat, but my family will not. Batter was quite thick going in. Had to add on quite a bit of time for it to be cooked in the middle. I love buckwheat, but I doubt I’ll make this again.

      wow this was so good! It’s kind of a lot of, “mush” so people who have issues with texture may not enjoy. I would not say the sauce tastes anything like cheese, but it does taste delicious! Will repeat.

      Components were good and makes for a very pretty meal, but I found this thick tofu “cheese” to be rather bland in comparison to her other sauces. Tried to “fix” it, but wasn’t able to get it there.

      I made quite a disaster in my kitchen making all the components to this, but it was delicious! Not my first time having this type of sandwich, but the flavor pairing here was great + I love the addition of the tofu and cashew cream. Already dreaming about having it again tomorrow.

      Good flavor, but I needed to add quite a bit of salt to make those flavors come out. My soup turned out really thick! More like baby food consistency. I did rinse my beans rather than add the bean liquid to the pot, but I would have thought adding water would make up for it. Still tasty!

      This was really tasty. As is typical for this book the serving sizes are huge; I calculated it at 7 servings with only half a squash and got (sorry Soph) 250 calories and 12 g protein per. I might cut the nutritional yeast next time, its flavour is obvious and I don't need all my meals tasting like that. The sage is more for aesthetics, I had some in the garden but wouldn’t buy it just for this recipe.

      Great flavor and very easy to throw together! I added bok choy & mushrooms to mine. Used white miso as that’s what I had on hand. Two red chilies from the garden gave it some nice heat!

      Very good! I could see myself prepping & freezing these to keep on hand. Used Ezekiel sprouted grain wraps. The guacamole is very lime forward rather than spicy, but still tasty! I added some jalapeno into the quesadillas themselves.served alongside the “Healing Beans and Greens” soup.

      This is delicious! Claiming the serving size is 2 is crazy. Who are these people? Giants? Ultramarathon runners? Regardless, I loved the heat in this + mix of other flavors. Sauce tasted great. I oven roasted my tomatoes rather than pan fry + threw some mushrooms in as well. Served with a sourdough discard flatbread.

      easy to throw together, but unfortunately I found this to be rather bland. I appreciated the mix of plant proteins that did not rely on tofu (I love tofu, but it’s sometimes leaned on too heavily). Subbed whole wheat spaghetti for spelt.

      I have to admit I was skeptical while making this but it's definitely more than the sum of its parts. I could see increasing the onion and garlic, maybe even doubling. I did my sauce with the immersion blender and it's fine but I think it would be worth using a high speed for the extra creaminess. As for serving size I might say there are four, it's a lot of chickpeas!

      This made my house smell incredible. I found this recipe a little confusing to follow — I had to re-read a section to understand what it was asking me to do. Tasting the sauce by itself — my husband asked me what it was supposed to be and I didn’t know. It just tasted like nooch. But once stirred into the curry everything was good! Served over brown rice. Extremely filling & I was able to get to 30g of plant protein!

      I thought the flavour of this was really delicious. It makes a lot, especially if you're having some bread/rice and veg on the side, more like 6 servings than 4. It froze well though, which was good for leftovers.

      Really delicious! I agree with NoaBC. Saying this makes 4 servings is a bit unhinged. It makes a ton! Served with rice, but I’d like to try making the naan recipe next, too!

      Another delicious “mush meal” from this book! The flavors are typically on point in the recipes, but the textures are mostly the same? My husband called it a, “sloppy bean bowl”. I used great northern beans instead of butter beans because I had some prepped in the freezer. Adding some crispy tofu to the top did help give some additional texture a biiittttt. But it was still mostly delicious mush. Regardless I am looking forward to leftovers!

      Really tasty and very rich, easily 6 portions rather than 4. TBH I went off script, I had 200 g of leftover tofu and scaled everything down accordingly and didn't have an orange so added a couple tablespoons of tahini instead. You could increase the tofu for a lighter pudding.

      Tried again using a bigger mug. Did not overflow! This time I subbed the coconut oil for 1T aquafaba + date syrup for the coconut sugar. Microwaved for 1 minute 20/30 seconds due to extra wet ingredient. A little less sweet/rich but will be my goto from now on!
