Notes about Recipes in this book

  • Pasta with "fake" sauce

    • lean1 on January 03, 2026

Made the entire sauce recipe but used half the amount of pasta. Messy to have to grate each veggie but worth the work. Excellent on crackers or toast as well.

  • Smashed green olive and garlic braised chicken

    • Jane on January 01, 2026

We enjoyed this a lot. I’m always on the lookout for new recipes using chicken thighs and this is a good one, especially for olive lovers. I did use Castelvetrano olives though they say any green olives will work.

  • Creamy tortilla chip and tomato soup

    • jaelsne on May 14, 2026

This was a very easy soup using some pantry ingredients and other things that I usually have on hand. It tasted far more complex than I imagined it would. We loved it. The sour cream is a must—I think you could add a little cream, milk or yogurt if you didn’t have sour cream. Recommend this recipe!

  • Miso butter spaghetti with scallions

    • Shewi128 on February 21, 2026

As with all miso recipes, it was very salty. However, it was easy and a decent alternative to normal spaghetti recipes with red sauce. I'd make it again.

  • Feta bake with shrimp and tomatoes

    • Jane on January 20, 2026

This was a quick & easy dinner. Nothing very special though nice enough.

  • Parmesan-crusted chicken with vinegar jus

    • hjcrookston on April 25, 2026

We differed in the method by starting the chicken in a cold, dry pan, but this still came out amazing! We rounded out the meal with mashed potatoes and creamed spinach.

  • Skillet lasagna

    • Shewi128 on February 02, 2026

This was easy and tasty. It took a little longer than expected but still reasonable for a weeknight meal.

  • Skillet chicken curry pot pie

    • BrendaD1962 on October 29, 2025

We really enjoyed this for supper last night. The only change I made was using the entire box of Japanese curry (about 7 oz.) instead of the 4 oz called for in the recipe. The full box provided a delicious thick gravy, and the puff pastry was a perfect top crust. Will be making again.

    • hjcrookston on May 09, 2026

I'm not sure the effort was worth the pay off, but this was pretty good!

  • Upside-down tomato tart with Parmesan pastry

    • lean1 on January 04, 2026

Fantastic recipe. Wonderful flavors, I loved the crust. Pretty easy to make but a lot of waiting time and it needs two hours at least. I did use dried thyme instead of fresh. Otherwise followed the recipe as written. Will make often in the summer when the tomatoes are at their best.

  • Pour-in the-pan pizza with tomatoes and mozzarella

    • Pandan on January 04, 2026

The idea sounded cool but I didn’t think this was that much less work than a less hydrated dough. Also I didn’t like the consistency that much and a bit too greasy because it needed a lot of oils to avoid sticking.

Publishers Text

The smartest, simplest, most powerful recipes that will transform your home cooking—from the James Beard Award-winning team at Milk Street.

In the kitchen, brevity is brilliant. Short recipes are the ones cooks remember best—not only because they're simple to make and easy to repeat, but because they are boiled down to their elemental beauty and charm.

In Milk Street Shorts, Christopher Kimball and his team of cooks and editors have developed a repertoire of nearly 150 genius recipes that are casual, improvisational, and fun. These recipes are not just short—they're bolder, better cooking because they're short. Their essential cleverness gives them power that does not require long ingredient lists or all-day cooking.

And every recipe packs a punch—throw-it-together meals like "Nothing Soup,"Chili Crisp Peanut Noodles, and Five-Ingredient Pork and Kimchi Stew, snacks and side dishes like Sunflower Hummus, Crispy Spiced Chickpeas, and Salt and Vinegar Smashed Potatoes, and smart ways to use your oven, like Reverse-Sear Pork Loin, Skillet Lasagna, and Two-Hour Turkey. Recipes are organized by simplicity—Short, Shorter, and Shortest—with chapters including skillet suppers, sheet-pan tray bakes, and weeknight desserts like Clementine Blender Cake.
