    I love Milk St and own just about everything they have published. I think it’s worth noting that this cookbook includes a huge number of their previously published recipes. As I’m flipping through the chapters, I’m not seeing a lot of new recipes but there are lots of extra tips and tricks. If you are interested in buying one cookbook with easily executable recipes and global flavors, this is all you need.

  • Greek cabbage salad with carrots and olives

      Son made it for lunch. Very good. I would suggest marinating cabbage and carrots for 24hrs in fridge instead of 30 minutes on counter. It probably would soften the cabbage more. This would make a great potluck dish.

  • Tomato, arugula and bread salad with fresh corn and mozzarella

      Very tasty salad. Using what I had on hand, I subbed cherry tomatoes and smoked gouda cheese.

      I used pita bread for the croutons and added a tablespoon of blue cheese and omitted the onion. Lots of flavors. Will make again.

  • Shaved zucchini and herb salad with Parmesan

      This was very tasty and easy to make, but, really should be made at the very last minute. The zucchini releases water and becomes soft, consequently losing volume. That being said, everyone liked this salad. Scaled up 1.5x for 5 people, yielded a modest serving per person due to shrinkage. (Same recipe in Milk Street Tuesday Nights)

  • Harissa potato salad with mint and lemon

      This potato salad was absolutely delicious. I halved the entire recipe except used the full 1/3 cup of mayo. I also substituted cilantro for the mint. The harissa paste added the perfect amount of heat and the lemon zest and juice brightened it all up. Definitely making again and again.

  • Butter-roasted carrots with za'atar and pomegranate molasses

      Really more of a 2.5 stars. Not bad, just not as nice as I think it should be when reading the recipe. I didn’t feel like I could taste the orange much. za’atar and carrots were a great combo though.

  • Crisp oven-fried cauliflower with tahini-yogurt sauce

      Interesting way to cook cauliflower, we loved it. I lowered the oven temperature and didn’t cook it as long, as I thought it was too hot and too long. Swapped the yogurt to soya yogurt, the sauce was delicious. Will be a repeat for me.

      I liked the flavors, but my sweet potatoes never got crispy. I suspect the pan was too crowded, so if I try again I’ll be more careful about spreading them out. Even if it means extra dishes.

      Excellent, and you can have it done in under an hour, which for ramen is stupid fast. The family doesn't enjoy how chunky it is if you leave the ground pork in there, so I sieve it out. I've doubled the recipe and frozen half, which also works well. You'll want to make some pairings with it, otherwise it's good but a bit one note. We've enjoyed mushrooms, menma (seasoned bamboo), frozen corn, and chashu pork.

  • Turkish red lentil soup

      Lovely variation on classic lentil soup. The tomato paste and little bit of rice rounds this soup out nicely. Subbed chicken stock for water and dried mint for fresh. Will make again.

  • One-hour homemade chicken broth

      This just didn’t taste good at all. I followed the recipe exactly as written. The broth was really peppery with no real chicken flavor coming through. Ended up tossing the whole thing.

      This is a reasonable weeknight recipe and perfectly pleasant to eat just nothing very special. It uses Arborio rice so is risotto-like though the stock is all added at once. It was still quite creamy with butter and cheese added at the end.

      This came together quickly. I was worried that the potatoes wouldn't cook but they were nice and soft. Cooked in time indicated. Roasted peppers are a nice addition. Served with roasted mushrooms. Family enjoyed it and will repeat. Make sure you have a good non stick pan.

      So simple and easy. Made with cascatelli (sporkfull pasta). Could easily cut in half. The sauce was light and silky. Minimal cutting needed and truly a one pot meal. The fresher the ingredients the better the outcome as very few in this dish.

      I cut this roughly in 1/2 with around 8 oz of pork tenderloin and added extra veg (red onions, yellow pepper & broccoli). They clearly say to not use canned pineapple...but I had some crushed pineapple in the freezer to use up and we were still pretty happy with the results. I stirred in some Asian noodles to serve, we liked the heat from the serrano and I will make this again.

      This stir fry is quick to make and marinating pork loin in cornstarch made it very tender. Loved the peppers and roasted peanuts in it. Using 2 tablespoons of chilli garlic was just right for us. This will be repeated.

      We loved this dish. I had no tamarind paste but Google told me I could replace it with vinegar and brown sugar. This dish is quick to put together if everything is mise en place. Spiced just right. I used rice ramen. Would consider adding tofu and broccoli next time.

      I liked this but didn't love it. It was quick to make so suitable for a weeknight dinner but I'm not sure I will repeat it. The chorizo adds interest with half being pureed in the sauce and half sliced.

      Ditto re: "delicious"! I added sweet peppers + shallot partway through the braise & I oven roasted carrots to spoon over our bowls (preferred over stewed carrots). A quick internet search gave red miso as a sub for the toban jiang & at the very end I stirred in some spicy tomato chutney to thicken the sauce a bit. Great over egg noodles!

      Shrimp were done on our BBQ. This recipe was o.k. very parsley intense. I would add more red pepper flakes next time. Do save some of the marinate to spread on the done shrimp.

      This is a winner. Spatchcocking a chicken might seem intimidating, but it's not that difficult. And having a flattened out bird shortens your cooking time and keeps all the glaze on the chicken. The glaze is full of flavor.

      Good. Not as flavorful as it could be. Plain rice I can accept, but straight raw cabbage is a missed opportunitiy. Next time: throw the cabbage into the sauce with the scallions or dress it with seasoned vinegar and sesame seeds or something creative.

      We love these and have made them many times. They do take a little planning, like partially freezing the pork so it is easier to slice thinly, and 30 minutes to marinate, but well worth it. Very flavorful.

      Made this with beef. A tablespoon of cumin was overwhelming for us. Will reduce to 1 1/2 teaspoons. The burger was nice and moist done on the grill.

      Son made this for mother's day. Nutmeg gives the steak a nice grilled look but you only get a slight hint of nutmeg. The steak was medium rare and very tender. I made chimichurri sauce with parsley to go with it. Nice way of making steak without grilling.

      These are very good. The lemon is mission critical. Serving suggestions would have been good. I think these would have been better stuffed into a pita with maybe some cucumber and pickled onion.

      Very easy to put together in Cuisinart. Made half the amount used Costco pita which is pretty soft. Left out the chili powder and parsley. Very good

      Rating is for the mechanics of the recipe, the taste itself was good. -pork doesn’t need separate baking dish to have to wash lol. Just marinade in bag or on second baking sheet. -on that note: put the pineapples on one cooking sheet, an the pork on another, and broil them at the same time!!! They cook for the same length anyhow. -lots of leftover pineapple and cilantro, and sauce. Adjust as necessary. -pork cooked faster than recipe said, watch closely.

      I'm planning to make this with chicken thighs. I will marinate for less time (1-2 hours) and aim for medium to medium-high heat (350°F – 400°F) to prevent the sugar-heavy Korean marinade from scorching before the chicken is cooked through. Also: Use Two-Zone Cooking: Set one side of the grill to high and leave the other off (indirect heat). Sear the thighs over direct heat for 3–5 minutes per side for color, then move them to the cooler side to finish cooking. Total Cooking Time: Depending on thickness and whether they are bone-in or boneless, chicken thighs typically take 10–20 minutes on the grill.

      I liked this a lot, much more than I expected! I did go with adding the optional bacon…it probably doesn’t need it, but I doubt I’d have been as enthusiastic without it
