Notes about Recipes in this book

  • Courgette, blue cheese & walnut tart

    • louise_xdwha1 on May 20, 2026

The courgettes didn’t really cook properly and made the tart a bit soggy. Luckily I had enough courgettes spare to fry it separately and stick it on top. Made it a yummy quick tea

  • Creamy garlic, asparagus & egg pasta

    • aeybkme on June 12, 2023

Nice, but the sauce would benefit from leaving the grated garlic to infuse before cooking. It was bland the first day but much better the second!

  • Mushroom tostadas

    • aeybkme on June 06, 2023

I used feta instead of goats cheese and added avocado. A solidly good weekend brunch option.

  • Harissa-roasted roots with feta, almonds & chickpeas

    • CourtneyT on February 28, 2024

Tasty. Makes a huge amount. Not the quickest traybake style meal but I'd be happy to make again.

  • Paneer & sweet pepper curry

    • aeybkme on July 02, 2023

Nice, easy curry. I used coconut milk instead of cream and made it in a pan instead of the oven. With a whole can of coconut milk this made four portions.

  • Creamy leek, broccoli & potato bake with a crunchy nut topping

    • CourtneyT on April 29, 2025

A bit time consuming but a solid tasty side dish.

  • Italian-style beans & mushrooms

    • CourtneyT on January 12, 2025

Lovely, hearty and easy to make. A perfect winter stew to use up any vegetables hanging around. I subbed chickpeas for cannellini beans. I also soaked the dried mushrooms in hot water well before starting and used the strained soaking water as part of the required liquid. The recipe does not specify when to add the 700ml water, so I added at the same time as the potatoes. This made a huge quantity- well more than servings for 4.

  • Cauliflower couscous with tahini sauce

    • aeybkme on June 12, 2023

I didn't use saffron and used less harissa (3tbsp). Next time I'd use 75g of raisins as I felt it was too many. Really great dish though! I also used less tahini in the sauce.
