  • Baked chicken curry

      I just used the veg we had in the house instead of what the recipe called for, carrots, red and green peppers, onion, left over bit of courgette, chillies. Served with rice instead of flatbreads. Still a very nice meal!

  • Herbed sausages with lentils & cabbage

      Had no precooked lentils so added dried red lentils and tripled the stock volume. Worked well though didn't look as nice. Much more filling than expected.

      Substituted kale for the spring greens. Also doubled the recipe, except for the puff pastry to make it more reasonable. I can't imagine eating half a sheet of puff pastry per person!

  • Vegan black bean stew

      I pureed part of the soup since it was pretty liquidy after an hour on the stovetop and I was looking for a thicker consistency. This was fine, maybe a touch too sweet for me, but not my favorite bean stew.

      Had no sweet potatoes but added (par boiled) cauliflower which worked well. Cut the carrots very small so it cooked a bit quicker, about 40 mins. Substituted juice from an orange for concentrated Robinsons squash and not for the first time, does the trick!
