      My husband loves sweet and sour pork, and after trying lots of versions, I've settled on this one, which is easy and delicious. I've made it dozens of times. There's also a slightly more complex version in Kylie's 'Heart and Soul' which I also make when I can bet bothered making the pickled vegetables.

      This salad is nicer when the eggplant is still warm. The combination with the tomato salsa dressing is just awesome. You can prepare the tomato dressing early in the day and let it marinade until you need it. Do not put it in the fridge, though. The tomatoes are going to lose their flavour.
