  • Old-fashioned beef stew

      This was really good! The meat's cooked first, then the veg, and the two are mixed together. Best way not to overcook the root vegetables but get the rump roast I used fork tender. I also used fruit wine for the wine option, and snap peas for the frozen peas. I should have cooked the peas a little longer, as I am not fond of crisp vegetables when everything else is meltingly soft. Definitely first class comfort food.

      Tasty, but needs to be served with rice. I used file powder to thicken it up, and it definitely give it a deep south note. I also think I would cut the chicken thighs into smaller pieces.

      This my husbands favorite dish. I like it because the flavors meld beautifully in a uncomplicated sort of way. Definitely use French lentils (Puy).

      Made a half batch using boneless, skinless thighs and beet greens rather than chard. Did 15 minutes in IP; probably should have done 12-13.
