      Pretty good; better the next day. Rather than refrigerating overnight to solidify the fat, I used an Oxo fat separator. Worked fine. Be careful not to burn the chopped chorizo.

      Huge success. Cooked in oven at 350, rather than on the cooktop, until just starting to brown (we don't like browned eggs). No need to flip. Was done perfectly.
